ASAM PEDAS AYAM BERKARI / CHICKEN IN HOT SOUR CURRY SAUCE



Chicken in Hot Sour Sauce

Ingredients

500 grams chicken cut into eight
3 tablespoons homemade chili paste
1 teaspoon curry powder 
1 stalk lemon grass, crushed
50 grams kesom leaves separated from the stems
​​ginger flower finely chopped
1 tomato cut in wedges
Salt
Sugar
Water
Tamarind juice
Olive oil

Methods

1.    Sauté ginger-garlic paste, chili paste, multipurpose paste until fragrant.
2.    Add in lemon grass, kesom leaves, curry powder and ginger flower until well mixed.
3.    Add the chicken that has been cut and mix together with all the mixture until well blended and chicken is tender.
4.    Add the water and stir until boiling.
5.    Put the tamarind juice, salt and sugar to taste.
6.    Once boiling, add tomatoes and stir briefly.
7.    Turn off the heat after all well mixed.
8.    Serve it with steamed white rice.

Asam Pedas Ayam

Bahan-bahan

500 grams ayam dipotong lapan
1 sudu teh serbuk kari 
1 batang serai dititik
50 grams daun kesom diasingkan dari batang
1 kuntum bunga kantan dipotong kecil
1 biji tomato dipotong wedges
Garam
Gula
Air
Air asam jawa
Minyak zaiton

Langkah-langkah

1.    Tumiskan pes halia-bawang putih, pes pelbagai guna dan pes cili kisar sehingga naik bau.
2.    Masukkan serai, daun kesom, serbuk kari dan bunga kantan sehingga sebati.
3.    Masukkan ayam yang telah dipotong dan gaul bersama dengan semua campuran sehingga sebati dan ayam menjadi lembut.
4.    Masukkan air dan kacau sehingga mendidih.
5.    Masukkan air asam jawa, garam dan gula secukup rasa.
6.    Setelah mendidih, masukkan tomato dan gaul seketika.
7.    Matikan api setelah semua masak dan sebati.
8.    Hidangkan untuk dimakan dengan nasi putih.
