LASAGNA PARATHA TORTILLA / PARATHA TORTILLA LASAGNA

Bahan-banan / Ingredients

Lapisan paratha, sosej dan keju / Paratha, sausage and cheese layer
Lapisan tortilla dan sos / Tortilla and sauce layer
Lapisan terakhir, paratha, keju, buah zaiton, meatloaf dan daun selasih / Final layer, paratha, cheese, olives, meatloaf and basil leaves
Bungkus dan bakar / Wrapped and baked

Tortilla Paratha Lasagna

Ingredients

1 pack of instant plain paratha (5 pieces / pack)
1 pack of instant tortilla (5 pieces / pack or 8 pieces / pack depends on the brand, choose your flavor )
1 pack of sausage (10 stick / pack) - round cut
1 pack of cheddar cheese (10 pieces / pack)
1 pack of chicken meatloaf (200 gm / pack)
5 cups of homemade pasta sauce
200 grams of grated mozzarella cheese
5-7 leaves of sweet basil
10 seedless olive - round cut
Olive oil

Methods

  1. Heat the oven at 180 - 230 degrees Celsius.
  2. Greased the container.
  3. Cut paratha into 2 parts.
  4. Cut tortillas into 2 parts.
  5. Arrange paratha cover the whole surface.
  6. Spread pasta sauce over the surface of the paratha.
  7. Arrange cheddar cheese and meatloaf alternately to cover the surface.
  8. Sprinkle sausage, then arrange cut paratha to cover the surface.
  9. Roll out the pasta sauce over the surface of the paratha.
  10. Arrange tortillas and roll the pasta sauce.
  11. Arrange cheddar cheese alternately with meatloaf to cover the surface.
  12. Sprinkle sausage, mozzarella cheese, cut olive and basil leaves.
  13. Wrap with aluminium foil and bake in oven for 15 minutes.
  14. Unwrapped the aluminium foil and continue to bake for 15 minutes or until last layer turn golden yellow.
  15. Cut and serve.
Lasagna Paratha Tortilla

Bahan-bahan

1 pek plain paratha segera (5 keping/pek)
1 pek tortilla segera (5 keping/pek atau 8 keping/pek bergantung kepada jenama, perisa ikut kegemaran)
1 pek sausage (10 batang/pek) dipotong bulat
1 pek keju cheddar (10 keping/pek)
1 pek lof daging (200 gm/pek)
5 cawan sos pasta buatan sendiri
200 grams keju mozzarella disagat
5 – 7 helai daun selasih manis (sweet basil)
10 biji buah zaiton tanpa biji dipotong bulat
Minyak zaiton

Langkah-langkah

  1. Panaskan ketuhar pada suhu 180 - 230 darjah Celsius.
  2. Bekas disapu minyak zaiton.
  3. Potong paratha kepada 2 bahagian.
  4. Potong tortilla kepada 2 bahagian.
  5. Susun paratha memenuhi permukaan bekas.
  6. Ratakan sos pasta di atas permukaan paratha.
  7. Susun kepingan keju berselang dengan lof daging memenuhi permukaan bekas.
  8. Taburkan sosej, kemudian disusun paratha memenuhi permukaan.
  9. Ratakan sos pasta di atas permukaan paratha.
  10. Susun tortilla dan ratakan sos pasta.
  11. Susun kepingan keju berselang dengan lof daging memenuhi permukaan bekas.
  12. Taburkan sosej, keju mozzarella, buah zaiton dan daun selasih.
  13. Tutup bekas dengan kepingan aluminium dan bakar dalam ketuhar selama 15 minit.
  14. Buka kepingan aluminium dan bakar semula selama 15 minit atau sehingga pemukaan kuning keemasan.
  15. Potong dan hidangkan.

SANDWIC BURGER AYAM KEJU / CHEESE CHICKEN BURGER SANDWICH


 

Cheese Chicken Burger Sandwich

Ingredients

4 slices of sandwich bread
2 slices of cheddar cheese
2 pieces of homemade chicken burger
Salad
Butter spreads
Sauces ( chilli , mayonnaise , mustard or any preferred sauces )

Methods

  1. Toast the sandwiches and spread butter.
  2. Grilled or fried chicken burger without oil until cooked.
  3. Prepare sandwiches and cheddar cheese slices.
  4. Put dressing sauces on cooked burger and salad on the sandwich.
  5. Ready to eat.
Sandwic Burger Ayam Keju

Bahan-bahan

4 keping roti sandwich
2 keping keju cheddar
2 keping burger ayam buatan sendiri 
Salad
Mentega sapuan
Sos (cili, mayonise, mustard atau sebarang sos yang disukai)

Langkah-langkah

  1. Bakar roti sandwich dan sapukan mentega.
  2. Burger ayam dipanggang atau digoreng tanpa minyak sehingga masak.
  3. Sediakan roti sandwich dan kepingan keju cheddar.
  4. Letakkan burger berserta salad dengan sos.
  5. Siap untuk dimakan.

KERABU BILIS / ANCHOVY KERABU


Anchovy Kerabu

Ingredients

200 grams of anchovies - dry roasted
3 shallots ( 1 large garlic cloves ) - shredded
1 stalk lemongrass - shredded
1 torch ginger flower - shredded
1 green chilli diagonally cut
3 -5 stems bird’s eye chillies finely chopped
50 grams of crushed peanuts

For the sauce

Lime juice – After extracted the juice cut lime into small pieces, mixed it with other cut/chopped ingredients
Salt
Sugar

Methods

  1. Combine all ingredients .
  2. Pour the sauce and mix well.
  3. Ready to be served .
Kerabu Bilis

Bahan-bahan

200 gram ikan bilis – digoreng garing
3 ulas bawang merah (1 ulas bawang besar) – dimayang
1 batang serai – dimayang
1 kuntum bunga kantan – dimayang
1 batang cili hijau dipotong serong
3 -5 batang cili padi dipotong kecil
50 gram kacang tanah ditumbuk kasar

Untuk sos

Jus limau kasturi – setelah diperah, limau dipotong kecil untuk digaul bersama bahan lain
Garam
Gula

Langkah-langkah

  1. Campurkan semua bahan.
  2. Masukkan sos dan gaul rata.
  3. Siap untuk dihidang.

AYAM MASAK KICAP-KERISEK / CHICKEN IN ROASTED COCONUT-SOY SAUCE


Chicken in Roasted Coconut-Soy Sauce

Ingredients

½ kg chicken cut into small pieces
3 large potatoes, cut into wedges
1 onion ground
2 cloves of garlic blended
1 table spoon homemade ginger-garlic paste
2 table spoons homemade chili paste
1 table spoon multi-purpose paste
3 tablespoons of turmeric powder
2 tablespoons curry powder
¼ teaspoon ground fennel seeds
¼ teaspoon ground cumin
¼ teaspoon ground coriander
Sweet-creamy soy sauce
Evaporated milk
Roasted coconut
Black pepper powder
Curry leaves
Salt
Sugar
Cooking oil

Methods

  1. Marinate chicken with turmeric powder, salt and ground materials for 30 minutes.
  2. Fry marinated chicken until half cooked. Put aside.
  3. Fry the potatoes partially cooked. Put aside.
  4. Sauté the homemade pastes until fragrant .
  5. Put curry powder, cumin, aniseed and coriander. Pour a little water to prevent the mixture from burnt.
  6. Pour sweet-creamy soy sauce, stirring until smooth . 
  7. Put black pepper and continue to stir. 
  8. Put roasted coconut, evaporated milk, salt and sugar to taste .
  9. Once boiling add the fried chicken and potatoes.
  10. Stir and allow to boil and let the chicken and potatoes cook.
  11. Serve and garnish with parsley and carrots .
Ayam Masak Kicap-Kerisek

Bahan-bahan

½ kg ayam dipotong kecil
3 biji kentang dipotong wedges
1 labu bawang besar dikisar
2 ulas bawang putih dikisar
1 sudu besar pes halia-bawang putih
2 sudu besar pes cili kisar
1 sudu besar pes pelbagai guna
3 sudu besar serbuk kunyit
2 sudu besar serbuk rempah kari
¼ sudu kecil serbuk jintan manis
¼ sudu kecil serbuk jintan putih
¼ sudu kecil serbuk ketumbar
Kicap lemak manis
Susu sejat
Kerisek
Serbuk lada hitam
Daun kari
Garam
Gula
Minyak masak

Langkah-langkah

  1. Ayam yang digaul dengan serbuk kunyit, garam dan bahan yang dikisar dan diperap selama 30 minit.
  2. Ayam yang telah diperap digoreng separa masak. Asingkan ayam yang telah digoreng.
  3. Gorengkan kentang separa masak. Asingkan.
  4. Menggunakan minyak gorengan, tumis pes-pes sehingga naik bau.
  5. Masukkan rempah kari, jintan putih, jintan manis dan ketumbar. Masukkan sedikit air untuk mengelakkan campuran hangus.
  6. Masukkan kicap lemak manis, kacau sehingga sebati. 
  7. Masukkan serbuk lada hitam dan kacau. 
  8. Masukkan sedikit kerisek, susu cair, garam dan gula secukup rasa.
  9. Setelah mendidih masukkan susu cair dan masukkan ayam dan kentang yang telah digoreng.
  10. Kacau dan biarkan sehingga mendidih supaya ayam dan kentang masak.
  11. Hidangkan dan hiaskan dengan daun sup dan lobak merah.

LAKSA PENANG UDANG / PENANG LAKSA PRAWN




Penang Laksa Prawn

Ingredients

5 fish mackerel (medium size)
250 gm fresh prawn
1 ginger flower bud
20 leaves kesom
5 stem red chillies
1 large onion
2 cloves garlic
4 tablespoons homemade chilli paste

1 tablespoon multi-usage paste
Salt
Dried tamarind
½ kg homemade rice noodles

Salads and Garnishing

China lettuce
Pineapple
Selom leaves
Cucumber
Calamansi
Hard-boiled egg
Fresh ginger flower bud

Methods

  1. Washed the fish and boiled.
  2. Once cooked, separate the flesh and bone, put the broth aside. Blended the fish flesh with red chili, onion, kesom leaves and ginger flower bud.
  3. The bones are blend and sieved to obtain the cream of fish.
  4. Heat the broth and put the ginger flower bud, homemade chilli paste, kesom leaves, dried tamarind and blended fish flesh and the cream of blended fish bone.
  5. Let it boil. Once boiled, add the prawn and salt to taste.
  6. Prepare the rice noodles in a bowl and fill it with the gravy and prawn.
  7. Sprinkle with salad and garnishing
  8. Ready to eat.
Laksa Penang Udang

Bahan-bahan

5 ekor ikan kembong (sederhana besar)
250 gm udang segar
1 kuntum bunga kantan
20 helai daun kesom
5 batang cili merah
1 bawang besar
2 ulas bawang putih
4 sudu besar pes cili kisar
1 sudu besar pes pelbagai guna
Garam
Asam keping
½ kg laksa beras

Ulam-ulam dan taburan

Daun salad china
Nenas
Daun selom
Timun
Limau kasturi
Telur rebus
Bunga kantan segar

Langkah-langkah

  1. Ikan dibasuh bersih dan direbus. 
  2. Selepas masak, isi dihancurkan, air rebusan diketepikan. Isi dikisar bersama cili merah, bawang besar, daun kesom dan bunga kantan.
  3. Tulang-tulang dikisar dan ditapis untuk mendapatkan pati ikan.
  4. Air rebusan terus dipanaskan dan masukkan bunga kantan, cili kisar, daun kesom, asam keping dan isi ikan dan pati kisaran tulang ikan yang ditapis.
  5. Biarkan sehingga mendidih. Setelah mendidih masukkan udang dan garam secukup rasa.
  6. Masukkan laksa beras dalam mangkuk dan isikan dengan kuah laksa dan udang.
  7. Taburkan ulam-ulam dan telor rebus.
  8. Sedia untuk dimakan.
