Mee Rebus Johor
Ingredients
1 kilo of noodles blanched3 stalks lemon grass bruised
1 inch galangal crushed
5 tablespoons meat curry powder
Salt
Palm sugar

Blended Ingredients 1
200 grams dried chilli1 stalk lemon grass
3 cloves garlic
3 shallots
1 inch ginger
½ inch galangal
½ inch fresh turmeric
½ cup dried shrimp
¼ teaspoon fennel seeds¼ teaspoon cumin
Blended Ingredients 2
½ kilo meat or tender beef with chunky bits of fats (boiled for broth)200 grams of fresh shrimp (boiled for broth)
4 boiled sweet potatoes
1 cup washed tauchu

Dried Shrimp Crackers
½ cup ground dried shrimp80 grams of flour
¼ teaspoon ground turmeric

Dried Shrimp Crackers
- Combine all ingredients and mix well.
- Fried mixture with leveling on walls of the pan and slide in oil.
- Fried crackers until crisp.
- Remove and drain.
Gravy
- Add lemon grass and galangal which was crushed into a greasy pan.
- Sauté the blended ingredients 1 until fragrant.
- Put meat curry powder and stir well.
- Put blended ingerdients 2 and mix well.
- If too thick add a little broth.
- Add salt and palm sugar to taste.
How to serve
- Noodles and bean sprouts blanched provided on the plate.
- Pour the broth and then garnish with a sprinkling of powdered materials and decoration dried shrimp. (Use fresh bean sprouts if you like to feel crunchy when eaten).

½ kilo daging dihiris halus ataupun tetel (direbus untuk air rebusan)200 gram udang segar (direbus untuk air rebusan)

Kuah
- Campurkan kesemua bahan-bahan dan gaul rata.
- Goreng adunan dengan meratakan pada dinding kuali dan dimasukkan ke dalam minyak.
- Goreng adunan sehingga garing.
- Angkat dan toskan.
Kuah
- Masukkan serai dan lengkuas yang telah dititik ke dalam kuali berminyak.
- Kemudian tumis bahan kisaran 1 hingga naik bau.
- Masukkan rampah kari kacau rata.
- Masukkan bahan kisaran 2 dan digaul rata.
- Jika terlalu pekat tambah sedikit air rebusan.
- Perisakan dengan garam dan gula kabung.
- Mee dan taugeh yang telah dicelur disediakan dalam pinggan.
- Tuangkan kuahnya dan kemudian hiaskan dengan bahan hiasan dan taburan tepung udang kering. (Boleh ditabur taugeh jika suka taugeh mentah untuk merasa kerangupan bila dimakan).
