DAGING TUMIS PEDAS / SPICY BRAISED BEEF



Spicy Braised Beef
Ingredients

½ kg of meat cut thin
2 tablespoon homemade multi-purpose paste
1 teaspoon coarse black pepper powder
1 large onion, sliced
3 cloves garlic, sliced
5 - 10bird's eye chili finely sliced
1 broccoli roughly cut
3 inches carrots cut and sliced
Olive oil
Water

Methods

  1. Marinate meat with a multipurpose paste for a while.
  2. Heat olive oil and sauté the onions, garlic and multi-purpose paste until fragrance.
  3. Put the meat and fry until cooked.
  4. Add black pepper powder. Mix well.
  5. Add some water and mix well.
  6. Add broccoli and carrots.
  7. Mix for a while and ready for serving.
Daging Tumis Pedas
 

Bahan-bahan
½ kg daging dipotong nipis
2 sudu besar pes pelbagai guna
1 sudu the serbuk kasar lada hitam
1 bawang besar dimayang
3 ulas bawang putih dimayang
5 – 10 biji cili padi dimayang halus
1 kuntum brokoli dipotong kasar
3 inci lobak merah dibelah dan dipotong
Minyak zaiton 

Garam
Gula
Air

 

Langkah-langkah
  1. Daging diperap dengan pes pelbagai guna seketika.
  2. Panaskan minyak zaiton dan tumiskan bawang besar, bawang putih dan pes pelbagai guna sehingga naik bau.
  3. Masukkan daging dan digoreng sehingga masak.
  4. Masukkan serbuk lada hitam. Digaul rata.
  5. Masukkan sedikit air dan digaul sehingga sebati.
  6. Masukkan brokoli dan lobak merah. 
  7. Perisakan dengan garam dan gula.
  8. Gaul seketika dan siap untuk dihidang.

SAMBAL BILIS TEMPE / ANCHOVIES TEMPE SAMBAL


Anchovies Tempe Sambal

Ingredients
4 pieces of tempe is cut small and thin, crispy fried
200 grams of anchovies, crispy fried
Tamarind paste
Brown sugar
Salt

Ingredients Blended

20 dried chillies soaked 10-15 minutes
2 onion
4 cloves garlic
½ inch ginger
½ inch galangal
50 grams of dried shrimp
½ shrimp paste

Methods
  1. Tempe and anchovies are fried separately until crisp, set aside.
  2. Sauté the blended ingredients until sauce becomes dry. Add tamarind paste.
  3. Add salt and brown sugar, set aside to cool.
  4. After all cool, put fried anchovies and fried tempe to sambal and mix until well mixed.
  5. Ready to be served or stored in jar.
Sambal Bilis Tempe

Bahan-bahan

4 keping tempe dipotong kecil dan nipis, digoreng rangup
200 gram bilis digoreng rangup
Asam jawa diambil pes
Gula perang
Garam

Bahan-bahan dikisar

20 tangkai cili kering direndam 10 – 15 minit
2 ulas bawang besar
4 ulas bawang putih
½ inci halia
½ inci lengkuas
50 gram udang kering
½ inci belacan

Langkah-langkah
  1. Tempe dan bilis digoreng berasingan sehingga rangup, ketepikan.
  2. Tumis bahan-bahan kisar sehingga sambal menjadi garing. Masukkan pes asam jawa.
  3. Perisakan dengan garam dan gula perang, ketepikan supaya sejuk.
  4. Setelah semua sejuk, masukkan tempe dan bilis ke dalam sambal dan gaul sehingga sekata.
  5. Siap dan boleh disimpan ke dalam balang.

SOTONG LEMAK PEDAS / SPICY CREAMY SQUID

Spicy Creamy Squid

Ingredients

3 medium-sized squid round cut
1 onion sliced
2 cloves garlic
1 tablespoon homemade multipurpose paste
1 tablespoon homemade garlic-ginger paste
3 tablespoons homemade chilli paste
3-5 bird’s eye chilli shredded
1 teaspoon coarse ground black pepper
1 tea spoon chilli flakes
3 crushed candle nuts
1 potatoes cut wedges
5 tablespoons thick coconut milk or yogurt
2 sprigs of curry leaves
Salt
Sugar
Olive oil for sauteing
Parsley for garnishing


Methods

  1. Sauté onion and garlic. Continue with curry leaves, multipurpose paste, garlic-ginger paste and chilli paste. Fry the paste until fragrant.
  2. Add potatoes and fry for a moment. If dry, add a little water.
  3. Add black pepper and chilli flakes. Mix well.
  4. Add the coconut milk and water, bring to a boil.
  5. Add the squid and leave it for while.
  6. Salt and sugar to taste.
  7. Ready to serve.  Garnish with parsley.
Sotong Cili Berlemak
Bahan-bahan

3 ekor sotong bersaiz sederhana dipotong bulat
1 biji bawang besar dimayang
2 ulas bawang besar
1 sudu besar pes pelbagai guna
1 sudu besar pes halia bawang putih
3 sudu besar pes cili kisar
3-5 cili padi dimayang
1 sudu teh serbuk kasar lada hitam
1 sudu teh kepingan cili
3 biji buah keras ditumbuk kasar
1 biji kentang
5 sudu santan pekat atau boleh juga guna yogurt
2 tangkai daun kari
Garam
Gula
Minyak zaiton untuk menumis

Daun sup untuk hiasan

Langkah-langkah

  1. Tumis bawang besar dan bawang putih.Masukkan daun kari, pes pelbagai guna, pes halia bawang putih, pes cili kisar dan tumis sehingga naik bau.
  2. Masukkan kentang dan gorengkan seketika. Jika kering, masukkan sedikit air.
  3. Masukkan lada hitam dan kepingan cili. Gaul rata.
  4. Masukkan santan dan air, biarkan mendidih.
  5. Masukkan sotong dan biarkan seketika. 
  6. Perisakan dengan garam dan gula.
  7. Siap untuk dihidang.  Hias dengan daun sup.

KUAH ROJAK / ROJAK SAUCE




Fruit Rojak Sauce

Ingredients

½ cup chili sauce

½ cup tomato sauce
½ cup sweet creamy soy sauce
3 table spoon homemade chilli paste (if like more hot, can add bird’s eye chilli)
½ cup sugar
1 cup brown sugar
½ inch toasted shrimp paste
½ cup water
5 tablespoons sesame – dry fry
Peanut dry fry and coarsely ground
2 tablespoons black fermented shrimp paste (optional)

Serving Suggestions

Tempe fry and cut

Tofu fry and cut
Cucumber
Young mango
Sengkuang 
Bean sprouts

Methods

  1. Combine all ingredients except sesame and peanuts, and bring to a boil.
  2. Once the mixture becomes thick, add sesame seeds and peanuts, and stir briefly.
  3. When sauce was ready, cooled it before filled into bottles for storage.
  4. Sauce can be served with the serving suggestions.
Kuah Rojak Buah

Bahan-bahan

½ cawan sos cili 

½ cawan sos tomato 
½ cawan kicap lemak manis 
3 sudu besar cili kisar (kalau suka pedas boleh tambah cili padi)
½ cawan gula 
1 cawan gula merah 
½ inci belacan yang dibakar
½ cawan air 
5 sudu bijan - disangai 
Kacang tanah goreng tanpa minyak & ditumbuk kasar
2 sudu pes otak udang (optional) 

Cadangan hidangan


Tempe dipotong dan digoreng
Tahu digoreng dan dipotong
Timun
Mangga muda
Sengkuang
Taugeh

Langkah-langkah

  1. Campurkan semua bahan kecuali bijan dan kacang tanah, dan panaskan sehingga mendidih. 
  2. Setelah campuran menjadi pekat, masukkan bijan dan kacang tanah, dan kacau seketika.
  3. Kuah telah siap disejukkan sebelum diisi ke dalam botol untuk simpanan. 
  4. Kuah boleh dihidang bersama bahan cadangan hidangan.

MURTILLA DAGING / BEEF MURTILLA (MURTABAK + TORTILLA)




Beef Murtilla (Murtabak + Tortilla)
Ingredients 

3 sheet precook tortilla
Olive oil

Filling

450 grams of minced beef
1 large onion, diced
1 teaspoon ground black pepper
1 teaspoon curry powder
1 egg beaten
Coriander

Methods

  1. Sauté onion until it is fragrant. 
  2. Add minced beef, black pepper, curry powder, coriander, egg and salt. Stir well and let it heated for a while.
  3. Once it cooked set aside. 
  4. Heat a frying pan with a little olive oil. 
  5. Place precooked tortilla on frying pan. 
  6. Turn tortilla, put the filling and fold tortilla. 
  7. Once tortilla turn to brownish colour, lift it and let it cool.
  8. Cut it into half and ready to eat.
Murtilla (Murtabak + Tortilla) Daging Lembu

Bahan-bahan

3 keping tortilla
Minyak zaiton

Inti

450 gram daging lembu kisar
1 biji bawang besar ~ potong dadu
1 sudu teh serbuk lada hitam
1 sudu teh serbuk kari daging
1 biji telor dipukul
Daun sup

Langkah-langkah

  1. Tumiskan bawang hingga wangi. 
  2. Masukkan daging lembu kisar, serbuk lada hitam, serbuk kari daging, daun sup, telor dan sedikit garam. Kacau sebati dan biarkan seketika. 
  3. Setelah masak ketepikan.
  4. Panaskan kuali leper dengan sedikit minyak zaiton
  5. Panaskan tortilla dan terbalikan setelah satu permukaan telah garing.
  6. Letakkan inti di tengah tortilla dan lipatkan.
  7. Setelah kulit tortilla menjadi garing, angkat dan sejukkan.
  8. Potong kepada dua bahagian dan siap untuk dimakan.
