BISTIK TELOR / EGGS BEEFSTEAK


Eggs Beefsteak

Ingredients

6 Grade A eggs (5 for eggs omelette, 1 for the filling)
200 grams of chicken meat, cut cube
2 onions minced
5 cloves of garlic minced
2 red chilli minced
2 green chilli minced
Capsicum (red, green, yellow) cut cube
1 carrot stalk cut into cubes
1 cup kernel sweet corn
2 tablespoons multi-purpose paste
1 tablespoon of blended chilli paste
1 tablespoon chilli sauce
1 tablespoon of tomato sauce
1 tablespoon oyster sauce
1 tablespoon sweet soy sauce
Oil to sauté
1 tablespoon evaporated milk
1 tablespoon of plum sauce
Parsley
Salt
Sugar

Methods

For omelette (2 pieces)
  1. Mix in the chopped onion and chilli. Break eggs and mix well.
  2. Add evaporated milk.
  3. Season with salt and sugar.
  4. Add the mixture and place in the pan to make omelette.
For filling
  1. Sauté onion and garlic until fragrant.
  2. Add a multi-purpose paste and blended chilli paste. Mix it well.
  3. Add chicken and carrot. Leave it for a while.
  4. Once the chicken is cooked add the capsicum, corn, red chilli and green chilli. Mix well.
  5. Add chilli sauce, tomato sauce, plum sauce, oyster sauce and sweet soy sauce.
  6. Break eggs and mix well.
  7. Once all is mix well, sprinkle the parsley leaves.
  8. Season with salt and sugar.
  9. Pour all the filling over the omelette, and cover with the omelette. 
  10. Ready to served.
Telor Bistik

Bahan-bahan 

6 biji telor gred A (5 biji untul telor dadar, 1 biji untuk inti bifstik
200 grams isi ayam dipotong kiub
2 biji bawang besar dimayang
5 ulas bawang putih dimayang
2 batang cili merah dimayang
2 batang cili hijau dimayang
Capsicum traffic light dipotong kiub
1 batang lobak merah dipotong kiub
1 cawan isi jagung manis kernel
2 sudu pes pelbagai guna
1 sudu besar cili kisar
1 sudu bedar sos cili
1 sudu besar sos tomato
1 sudu besar sos tiram
1 sudu besar kicap lemak manis
Minyak untuk menumis
1 sudu besar susu cair
1 sudu besar sos plum
Daun sup
Garam
Gula

Langkah-langkah

Untuk telor dadar (2 keping)
  1. Campurkan bawang besar dan cili yang dimayang. Pecahkan telor dan digaul rata.
  2. Masukkan susu cair.
  3. Perisakan dengan garam dan gula.
  4. Sendukkan campuran dan masukkan dalam kuali untuk jadikan telor dadar.
Untuk inti bistik
  1. Tumiskan bawang besar dan bawang putih sehingga naik bau.
  2. Masukkan pes pelabagai guna dan cili kisar. Digaul rata.
  3. Masukkan daging ayam dan lobak merah. Dibiarkan seketika.
  4. Setelah ayam masak masukkan capsicum, jagung, cili merah dan cili hijau. Digaul sebati.
  5. Masukkan sos cili, sos tomato, sos plum, sos tiram dan kicap lemak manis.
  6. Pecahkan telor dan digaul rata.
  7. Setelah semua sebati, taburkan daun sup.
  8. Perisakan dengan garam dan gula.
  9. Curahkan semua inti ke atas permukaan telor dadar, dan dtutup dengan telor dadar.
  10. Siap untuk dihidang.

KERABU IKAN MAYONG / HALIBUT SALAD

Halibut Salad

Ingredients 

300 grams of dried/salted halibut fillet cut into cubes
3 stalks lemongrass sliced
5 -7 cloves of shallot sliced
3 – 4 cloves garlic sliced
1 ginger bud sliced
5 -10 stems bird’s eye chilli sliced
8 – 10 mint leaves sliced
1 whole lemon squeezed for juice

Salt
Sugar

Methods 
  1. Fry halibut fillet for 2 - 3 minutes, put aside. 
  2. Put the fried fillet in a container and mixed all sliced ingredients. Mix well.
  3. Add salt and sugar to taste 
  4. Pour squeezed lemon juice and mixed thoroughly. 
  5. Ready to be served. 
Kerabu Ikan Mayong

Bahan-bahan

300 gram isi ikan mayong kering/masin dipotong kiub
3 batang serai diracik
5 – 7 ulas bawang merah diracik
3 – 4 ulas bawang putih diracik
1 kuntum bunga kantan diracik
5 – 10 batang cili padi diracik
8 – 10 helai daun pudina diracik
1 biji lemon diperah jus
Garam
Gula

Langkah-langkah
  1. Ikan mayong digoreng 2 ke 3 minit, ketepikan, 
  2. Masukkan ikan di dalam bekas dan dicampurkan semua bahan diracik. Gaul rata. 
  3. Garam dan gula secukup rasa.
  4. Masukkan jus perahan lemon dan digaul sehingga sebati. 
  5. Siap untuk dihidang.

TUMIS AYAM GAJUS / CASHEW NUT CHICKEN STIR-FRY


Cashew Nut Chicken Stir-fry

Ingredients

2 parts of chicken breast - cubed and bones removed
1 packet prepared roasted cashew nuts
3 dried chilli shredded

5 bird's eye chilli - shredded1 large onion, sliced
3 cloves garlic, sliced
½ red capsicum, cut lengthwise
½ yellow capsicum, cut lengthwise
½ green capsicum, cut lengthwise
1 teaspoon homemade ginger-garlic paste
1 tablespoon homemade multi-purpose paste
1 teaspoon of plum sauce
1 tablespoon oyster sauce
Salt
Sugar
Oil for frying and sautéing

Methods

  1. Heat a frying pan and fry the chicken until ¾ cooked, set aside.
  2. Fried oil, fry the onion, garlic, ginger-garlic paste and multi-purpose paste until fragrant.
  3. Stir in chicken and re-enter the plum sauce, oyster sauce, all colours capsicum, bird’s eye chilli and dried chilli, mix well.
  4. Put cashew nuts, salt and sugar to taste. Mix it well.
  5. Ready to be served.
Tumis Ayam Gajus

Bahan-bahan

2 bahagian dada ayam – dipotong dadu dan dibuang tulang
1 peket kacang gajus siap digoreng
3 batang cili kering dimayang
5 cili padi dimayang
1 bawang besar dimayang
3 ulas bawang putih dimayang
½ biji lada benggala merah, dipotong memanjang
½ biji lada benggala kuning, dipotong memanjang
½ biji lada benggala hijau, dipotong memanjang
1 sudu teh pes halia-bawang putih
1 sudu besar pes pelbagai guna
1 sudu teh sos plum
1 sudu besar sos tiram
Garam
Gula
Minyak untuk menggoreng dan menumis

Langkah-langkah

  1. Panaskan kuali dan goreng ayam sehingga ¾ masak, ketepikan.
  2. Menggunakan minyak gorengan, tumiskan bawang besar, bawang putih, pes halia-bawang putih dan pes pelbagai guna sehingga naik bau.
  3. Gaulkan semula ayam dan masukkan sos plum, sos tiram, cili benggala, cili padi dan cili kering, gaul rata.
  4. Masukkan kacang gajus, perisakan dengan garam dan gula. Gaul rata.
  5. Siap untuk dihidang.
