ACAR JELANTAH / MIXED VEGETABLE PICKLES



Mixed Vegetable Pickles

Ingredients

1 stalk cucumber cut lengthwise
1 carrot cut lengthwise
2 stems red chillies cut lengthwise
1 onion, sliced
3 shallots, sliced
1 whole lemon squeezed for juice water, grated skin for zest
2 tablespoons Sunquic’s orange juice
Salt
Sugar

Methods

  1. Combine chili, cucumber, carrot, onion and shallot, mixed it well.
  2. Add lemon juice, orange juice, salt and sugar.
  3. Stir and mix well.
  4. Ready to be served with rice.
Acar Jelantah

Bahan-bahan

1 batang timun dipotong nipis memanjang
1 batang lobak merah dipotong nipis memanjang
2 batang cili merah dipotong memanjang
1 ulas bawang besar dimayang
3 ulas bawang merah dimayang
1 biji lemon diperah air, kulit disagat
2 sudu jus oren Sunquick
Garam
Gula

Langkah-langkah

  1. Campurkan cili merah, timun, lobak merah, bawang besar dan bawang merah, digaul rata.
  2. Masukkan jus lemon, jus oren, garam dan gula.
  3. Kacau dan gaul rata.
  4. Siap untuk dihidang bersama nasi.

KEK PISANG GEBU / FLUFFY BANANA CAKE






Fluffy Banana Cakes(Credit to Lina Kz Shaari)

Ingredients

1 cup mashed ripe bananas
½ cup corn oil
½ cup condensed milk
¾ cup brown sugar
2 eggs
2 cups whole wheat flour
1 teaspoon soda bicarbonate
½ teaspoon baking powder
¼ cup almond chips
½ cup chocolate chips

Methods

  1. Heat the oven to 175 degree Celsius.
  2. Mix all ingredients.
  3. Let it rest for about 20 minutes.
  4. Lightly oil the mould.
  5. Spoon the mixture to ¾ full mould. 
  6. Sprinkle remaining almonds chips and chocolate chips over the top of the dough.
  7. Bake for 15 - 30 minutes.
  8. Once cooked serve.
Kek Pisang Gebu

Bahan-bahan

1 cawan pisang lenyek
½ cawan minyak jagung
½ cawan susu pekat 
3/4 cawan gula perang 
2 biji telur 
2 cawan tepung gandum 
1 sudu the soda bikarbonat 
1/2 sudu kecil baking powder
¼ cawan cip badam
½ cawan cip cokelat 

Langkah-langkah

  1. Panaskan ketuhar pada suhu 175 darjah Celsius. 
  2. Gaul rata semua bahan. 
  3. Perap lebih kurang 20 minit. 
  4. Sapu minyak pada acuan. 
  5. Masukkan adunan ¾ penuh acuan saja. 
  6. Taburkan cip cokelat di atas permukaan adunan.
  7. Bakar selama 15 – 30 minit.
  8. Setelah masak hidangkan.

GULAI DAGING UNTUK NASI DAGANG / BEEF CURRY FOR NASI DAGANG



Beef Curry for Nasi Dagang

Ingredients

½ kg beef cut into cubes

4 potatoes cut cubed
1 packet of curry powder mixed with water to formed a paste
Coconut milk from 1 coconut
1 tablespoon toasted coconut
1 tablespoon blended chili paste
1 tablespoon multipurpose paste
1 tablespoon garlic-ginger paste
Bay leaf
4 stems bird’s eye chilli, pounded
Salt
Sugar

Methods

  1. Boiled meet until tender, put aside broth.
  2. Coconut milk is heated until it separated.
  3. Put potatoes and curry paste, stir briefly.
  4. Enter toasted coconut, blended chili paste, multipurpose paste, garlic-ginger paste and bay leaf.
  5. Once boiling, add the boiled meat and a little broth.
  6. Put bird’s eye chillies and lets the gravy well mixed. Stir until smooth.
  7. Sugar and salt to taste
  8. Ready to be served with nasi dagang.
Gulai Daging Nasi Dagang
Bahan-bahan

½ kg daging lembu dipotong kiub
4 biji kentang dipotong kiub
1 peket rempah kari daging dicampur air menjadi pes
Santan dari 1 biji kelapa
1 sudu besar kerisek
1 sudu besar pes cili kisar
1 sudu besar pes pelbagai guna
1 sudu besar pes halia bawang putih
Daun salam
4 batang cili padi diketuk sedikit
Garam
Gula

Langkah-langkah

  1. Daging direbus sehingga empuk, air rebusan disimpan.
  2. Santan dipanaskan sehingga pecah minyak.
  3. Masukkan kentang dan pes rempah kari, kacau seketika.
  4. Masukkan kerisek, pes cili kisar, pes pelbagai guna, pes halia bawang putih dan daun salam.
  5. Setelah mendidih, masukkan daging yang telah direbus dan sedikit air rebusan.
  6. Masukkan cili padi dan biarkan seketika dan kuah menjadi sebati. Kacau sehingga sekata.
  7. Perisakan dengan garam dan gula.
  8. Siap untuk dihidang bersama nasi dagang.

NASI DAGANG

Beras direndam / Soaking the rice 
Beras Dikukus / Steaming the rice
Beras digaul dengan Santan / Rice mixed with coconut milk
Nasi dikukus semula / Re-steaming the rice 
Dihidang bersama lauk / Served with other dishes
Nasi Dagang

Ingredients

3 cups plain rice
½ cup glutinous rice
½ cup brown rice
3-5 shallots, sliced
3 cloves garlic, sliced
1 inch ginger cut into strips
Pandan leaf
1 stalk lemon grass bruised
1 teaspoon fenugreek
Santan (from 1 seed coconut)
Salt
Sugar

Methods

  1. Mix all the rice and soak overnight.
  2. Steam soaked rice with pandan leaf and bruised lemongrass until 75% cooked.
  3. Remove from steamer, mixed well the rice with the mixture of coconut milk, salt and sugar. 
  4. Sprinkle with fenugreek, onion, garlic and ginger, steamed until well cooked.
  5. Remove from steam and mix with remaining coconut milk.
  6. Ready to be served with fish or beef/chicken curry, ayam masak merah, mixed vegetable pickles and other dishes.
Nasi Dagang

Bahan-bahan

3 cawan beras biasa
½ cawan beras pulut
½ cawan beras perang
3 – 5 ulas bawang merah dimayang
3 ulas bawang putih dimayang
1 inci halia dipotong memanjang
Daun pandan
1 batang serai dititik
1 sudu teh halba
Santan (dari 1 biji kelapa)
Garam
Gula

Langkah-langkah

  1. Campur semua beras dan rendam semalaman
  2. Kukus campuran beras yang direndam berserta daun pandan dan serai sehingga 75% masak.
  3. Keluarkan dari kukus, dicampur santan yang diperisakan dengan garam dan gula dan digaul rata.
  4. Taburkan halba, bawang merah, bawang putih dan halia, kukus semula sehingga masak.
  5. Keluarkan dari kukus dan digaul rata dengan baki santan.
  6. Siap untuk dihidang bersama kari ikan atau daging/ayam, ayam masak merah, acar timun dan lain-lain lauk.
