RENDANG SAMUDERA AYAM





Rendang Samudera Ayam
Ingredients

1 chicken cut to small pieces

* all ingredients are blended
3 onions *
5 cloves garlic *
6 red chillies *
5 bird’s eye chilies *
½ inch ginger *
½ inch galangal *
½ inch tumeric *
5 cloves * 

2 cardamom *
½ teaspoon of coriander *
½ teaspoon of black pepper *
2 lemongrass *

Kaffir lime leaves
Turmeric leaf
2 lemongrass pounded
2 cup thick coconut milk
½ cups of roasted coconut
Salt
Sugar
Oil to sauté
 

Methods
  1. Chickens are marinated with blended ingredients.
  2. Sauté blended ingredients and lemongrass until fragrance.
  3. Pour coconut milk and roasted coconut, let it break up oil.
  4. Put the marinated chicken and let it cook.
  5. Add sugar and salt to taste.
  6. Add in the kaffir lime leaves and turmeric leaves.
  7. Leave for a while until sauce thicken.
  8. Ready to be served.

Bahan-bahan

1 ekor ayam dipotong kecil

* semua bahan dikisar
3 biji bawang besar *
5 ulas bawang putih *
6 batang cili merah *
5 batang cili padi *
½ inci halia * ½ inci lengkuas * ½ inci kunyit *
5 biji cengkih *
2 biji buah pelaga *
½ sudu teh ketumbar * ½ sudu teh lada hitam *
2 batang serai *

Daun limau purut
Daun kunyit
2 batang serai dititik
2 cawan santan pekat
½ cawan kerisek
Garam
Gula
Minyak untuk menumis

Langkah-langkah

  1. Ayam diperap seketika dengan bahan dikisar.
  2. Tumis bahan kisar dan serai sehingga naik bau.
  3. Masukkan santan dan kerisek, biarkan sehingga pecah minyak.
  4. Masukkan ayam yang telah diperap dan biarkan sehingga masak.
  5. Perisakan dengan garam dan gula.
  6. Masukkan daun limau purut dan daun kunyit.
  7. Biarkan seketika sehingga kuah menjadi pekat.
  8. Siap untuk dihidang.
