MEE UDANG / PRAWN NOODLES


Prawn Noodles


Ingredients

500 grams of yellow noodles
1 kg of medium size prawn
1 tablespoon multi-purpose paste

1 tablespoon ginger-garlic paste
4 tablespoons blended chilli paste
2 cans whole tomatoes
1 can cream of tomato / tomato soup
1 onion, minced
4 cloves garlic, minced
3 tablespoons plum sauce / tamarind sauce
Mustard leaves
Cabbage
Salt
Sugar

Garnishing Ingredients

Parsley
Spring onion
Red chillies
Lime
Tofu, fried and cut cube
Bean sprout
Fried onions

Methods

  1. Thawed noodles until soft.
  2. Cleaned the prawn and boiled it until it turned orange. Separate prawn from boiled water (broth).
  3. Heat pot with oil. Sauté the garlic and onion until fragrance.
  4. Add the plum sauce, ginger-garlic paste, multi-purpose paste and blended chilli paste, let it becomes quite crisp.
  5. Put whole tomatoes and cream of tomato / tomato soup, stir until boiling.
  6. Pour prawn broth and stir until boiling.
  7. Add the mustard leaves and cabbage leaves, put prawn.
  8. Salt and sugar to taste.
  9. Prepare the noodles in a bowl, pour the gravy and prawn. Sprinkle garnishing ingredients.
  10. Ready to be served.
Mee Udang

Bahan-bahan

500 grams mee kuning
1 kg udang sederhana besar
1 sudu besar pes pelbagai guna 

1 sudu besar pes halia-bawang putih
4 sudu besar pes cili kisaran
2 tin whole tomato
1 tin cream of tomato / sup tomato
1 biji bawang besar dimayang
4 ulas bawang putih dimayang
3 sudu sos plum / Air asam jawa
Daun sawi
Kobis
Garam
Gula

Bahan Hiasan

Daun sup
Daun bawang
Cili merah
Limau Kasturi
Tauhu digoreng dan dipotong kiub
Taugeh
Bawang Goreng

Langkah-langkah

  1. Mee dicelur sehingga agak lembut.
  2. Udang dibersih dan direbus seketika. Asingkan udang dari air rebusan.
  3. Panaskan periuk bersama minyak untuk menumis. Tumis bawang putih dan bawang besar sehingga naik bau.
  4. Masukkan sos plum, pes halia-bawang putih, pes pelbagai guna dan pes cili kisaran dan ditumis sehingga menjadi agak garing.
  5. Masukkan whole tomato dan cream of tomato/tomato sup, dikacau rata sehingga menggelegak.
  6. Isikan air rebusan udang dan dikacau sehingga mendidih.
  7. Masukkan daun sawi dan kobis, setelah layu masukkan udang yang telah diasingkan.
  8. Perisakan dengan garam dan gula.
  9. Sediakan mee dalam mangkuk, isikan kuah dan udang. Taburkan bahan hiasan.
  10. Siap untuk dihidang.
