SAMBAL BILIS TEMPE / ANCHOVIES TEMPE SAMBAL


Anchovies Tempe Sambal

Ingredients
4 pieces of tempe is cut small and thin, crispy fried
200 grams of anchovies, crispy fried
Tamarind paste
Brown sugar
Salt

Ingredients Blended

20 dried chillies soaked 10-15 minutes
2 onion
4 cloves garlic
½ inch ginger
½ inch galangal
50 grams of dried shrimp
½ shrimp paste

Methods
  1. Tempe and anchovies are fried separately until crisp, set aside.
  2. Sauté the blended ingredients until sauce becomes dry. Add tamarind paste.
  3. Add salt and brown sugar, set aside to cool.
  4. After all cool, put fried anchovies and fried tempe to sambal and mix until well mixed.
  5. Ready to be served or stored in jar.
Sambal Bilis Tempe

Bahan-bahan

4 keping tempe dipotong kecil dan nipis, digoreng rangup
200 gram bilis digoreng rangup
Asam jawa diambil pes
Gula perang
Garam

Bahan-bahan dikisar

20 tangkai cili kering direndam 10 – 15 minit
2 ulas bawang besar
4 ulas bawang putih
½ inci halia
½ inci lengkuas
50 gram udang kering
½ inci belacan

Langkah-langkah
  1. Tempe dan bilis digoreng berasingan sehingga rangup, ketepikan.
  2. Tumis bahan-bahan kisar sehingga sambal menjadi garing. Masukkan pes asam jawa.
  3. Perisakan dengan garam dan gula perang, ketepikan supaya sejuk.
  4. Setelah semua sejuk, masukkan tempe dan bilis ke dalam sambal dan gaul sehingga sekata.
  5. Siap dan boleh disimpan ke dalam balang.
