PULUT SERONDENG / CREAMY GLUTINOUS RICE WITH COCONUT FLOSS







Glutinous Rice with Floss

Ingredients

Glutinous Rice

3 cups glutinous rice soaked for 2 – 3 hours
Coconut milk from 1 coconut seed
Salt
Pandan leaves

Floss

Grated coconut from 1 whole coconut
1 tbsp turmeric powder
1 onion sliced
2 tablespoons homemade chili paste
1 teaspoon homemade ginger-garlic paste
1 teaspoon homemade multi-purpose paste
50 grams of dried shrimp mashed together with onion
Salt
Sugar
Cooking oil

Methods

Glutinous Rice
  1. Soak glutinous rice for 2-3 hours.
  2. Heat the steamer to a boil.
  3. Put the pandan leaves into the water in the steamer.
  4. Drain the rice and put in a container for steaming.
  5. Add water to cover the rice.
  6. Steam the glutinous rice for 15 minutes.
  7. Remove the glutinous rice mix it with coconut milk and stir until smooth.
  8. Steam the mixture again for 5 minutes.
  9. Remove from steamer and form into balls.
Floss
  1. Fry the pastes and mixed of shrimp and onion until fragrant.
  2. Put grated coconut that has been mixed with turmeric powder until wilted.
  3. Taste it with salt and sugar.
  4. Once well mixed, put in a container to cool rolled the sticky rice.
  5. Ready to be served.
Pulut Serunding
Bahan-bahan

Pulut

3 cawan beras pulut
Santan dari 1 biji kelapa
Garam
Daun Pandan

Serunding

Kelapa parut dari 1 biji kelapa
1 sudu besar serbuk kunyit
1 bawang merah dimayang
2 sudu besar pes cili kisar
1 sudu teh pes halia-bawang putih
1 sudu teh pes pelbagai guna
50 gram udang kering ditumbuk bersama bawang merah
Garam
Gula
Minyak masak

Langkah-langkah

Pulut
  1. Rendam beras pulut selama 2 – 3 jam.
  2. Panaskan pengukus sehingga mendidih.
  3. Masukkan daun pandan ke dalam air pengukus.
  4. Toskan beras dan masukkan ke dalam bekas untuk mengukus.
  5. Masukkan air sehingga menutupi beras.
  6. Kukuskan pulut selama 15 minit.
  7. Keluarkan pulut dan gaulkan dengan santan sehingga sebati.
  8. Kukus semula selama 5 minit.
  9. Keluarkan dan bentukan menjadi bebola.

Serunding
  1. Tumiskan semua pes dan campuran udang kering dan bawang sehingga naik bau.
  2. Masukkan kelapa parut yang telah digaul bersama serbuk kunyit sehingga layu.
  3. Perisakan dengan garam dan gula.
  4. Setelah sebati sejukkan di dalam bekas untuk digaul bersama pulut.
  5. Siap untuk dihidang.
