Fish Curry
Ingredients
1 kg snapper fish (taken half up to the head)
100 gm
of fish
curry powder
1 large garlic clove – blended
2 cloves
garlic – blended
1 cm ginger – blended
3 tbsp chili
paste
1 stalk curry leaves
8 stems of ladyfinger
2 pieces
of round brinjals (quartered)
2 tomatoes (quartered)
Tamarind extracted with 3 cups water
Salt
Sugar
5 tablespoons
of palm oil
milk
Olive oil
Methods
1. Wash the fish that have been cut and put the blended ingredients and curry powder. Marinade for 15 to 30 minutes.
2. Hot pot and add olive oil. Sauté ground ingredients until fragrant.
3. Put the chili paste, powder, fennel seeds, cumin, coriander and curry leaves. Stir until well blended.
4. When turn golden, add the extracted tamarind water into the mix. Mix thoroughly and boil.
5. Add the marinated fish and brinjals. Add salt and sugar to taste. Let it boil. Pour palm oil milk.
6. Put the ladyfinger and tomatoes and simmer for a while.
7. Turn off the heat and ready to be served.
Kari Ikan
Bahan-bahan
1 kg ikan jenahak (diambil separuh sehingga ke kepala)
100 gm serbuk kari ikan
1 ulas bawang besar - dikisar
2 ulas bawang putih - dikisar
1 cm halia - dikisar
3 sudu besar cili kisar
1 tangkai daun kari
8 batang bendi
2 biji terung bulat (dibelah empat)
2 biji tomato (dibelah empat)
2 sudu besar air asam jawa
Garam
Gula
5 sudu besar santan sawit
3 cawan air
Minyak zaiton
Langkah-langkah
1.
Cuci ikan yang telah dipotong dan
lumurkan dengan bahan kisar dan sedikit rempah kari. Perapkan selama 15
hingga 30 minit.
2.
Panas periuk dan masukkan minyak
zaiton. Tumiskan bahan dikisar sehingga naik bau.
3.
Masukkan cili kisar, serbuk jintan
manis, jintan putih, ketumbar dan daun kari. Kacau sehingga sebati.
4.
Apabila telah garing, masukkan air yang
diperah asam jawa ke dalam campuran. Kacau sehingga sebati dan
mendidih.
5.
Masukkan isi ikan yang diperap dan
terung. Masukkan garam dan gula secukup rasa. Biarkan sehingga mendidih.
Masukkan santan sawit.
6.
Masukkan bendi dan tomato dan biarkan
mendidih seketika.
7.
Matikan api dan siap untuk dihidang.
