MEE BANDUNG TULANG / BONES BANDUNG NOODLE


Bones Bandung Noodles

Ingredients
1 packet of noodles, blanched
Green and red chilli diagonally cut
½ kg beef bones - boiled until tender and save broth
1 can tomato soupOil for sautéing
 

Ingredients for gravy

10-15 sticks of dried chilli
5 bird’s eye chilli
½ inch ginger
1 fresh tomato
50 grams of dried shrimp
20 grams of anchovies
1 large onion
2 cloves garlic
1 stalk lemongrass
2 whole chicken egg
100 grams of crushed peanuts
Mustard leaf
Salt
Sugar

Methods

  1. Boil beef bones until tender and set aside broth.
  2. Blend gravy ingredients until smooth except for mustard leaf, peanut, salt and sugar.
  3. Heat oil in a skillet and sauté the ingredients until fragrant.
  4. Pour the broth according to the desired concentration. Once boiled pour tomato soup and put the bone and leave it for a while.
  5. Break the eggs into the gravy and let until hardens.
  6. Put mustard leaves, crushed peanut and add salt and sugar to taste.
  7. Put the blanched noodles in a dish and pour the gravy over the noodles.
  8. Garnish with sliced green and red chillies.
Mee Bandung Tulang

Bahan-bahan

1 bungkus mee kuning dicelur
Cili hijau dan merah dipotong serong
½ kg tulang lembu – direbus sehingga empuk dan simpan air rebusan
1 tin sop tomatoMinyak untuk menumis

Bahan untuk kuah

10 – 15 batang cili kering
5 cili padi
½ inci halia
1 biji tomato
50 gram udang kering
20 gram ikan bilis
1 bawang besar
2 ulas bawang putih
1 batang serai
2 biji telor ayam
100 gram kacang tanah ditumbuk kasar
Daun sawi
Garam
Gula

Langkah-langkah

  1. Rebus tulang sehingga empuk dan ketepikan air rebusan.
  2. Bahan-bahan untuk kuah dikisar sehingga halus kecuali daun sawi, kacang tanah, garam dan gula.
  3. Panaskan minyak dalam kuali dan tumis semua bahan kisaran sehingga berbau wangi.
  4. Masukkan air rebusan mengikut kepekatan yang dikehendaki. Setelah mendidih tuangkan sup tomato dan masukkkan rebusan tulang dan biarkan seketika.
  5. Pecah telor kedalam kuah dan biarkan seketika sehingga mengeras.
  6. Masukkan daun sawi serta kacang tanah dan diperisakan dengan garam dan gula.
  7. Masukkan mee yang telah dicelur ke dalam bekas dan curahkan kuah ke atas mee.
  8. Hiaskan dengan hirisan cili hijau dan merah.
