KUIH LOPES SEGITIGA / TRIANGLE GLUTINOUS RICE CAKE



Triangle Glutinous Rice Cake 

Ingredients

500 grams of glutinous rice

2 tablespoons edible lime paste
½ coconuts grated, use only white part 
2 loaves of palm sugar
Pandan leaves
Banana leaves and tooth pick for fastening 

Cloth / raffia string 
Salt

Methods

  1. Glutinous rice soaked with the edible lime paste for 2-3 hours.
  2. Toss glutinous rice and mix well with salt.
  3. Banana leaves are cleaned, trimmed and held over a flame for a while to soften it.
  4. Fold banana leaves into a triangular pouch.
  5. Fill the triangle pouch with tossed glutinous rice, pack the rice in the cartridge.
  6. Pin tooth pick stick to tighten banana leaf pouch.
  7. Prepare 2-3 filled pouch and tied with cloth / raffia string to prevent the rice from falling out.
  8. Put the triangle pouches which was tied to the pot and fill the water up above tied triangle pouches.
  9. Add pandan leaf and boil for 2-3 hours.
  10. Prepare grated coconut mixed with salt and steamed for 2-3 minutes.
  11. Heat palm sugar till melted with a little water to make syrup.
  12. Once glutinous rice cake cook, let it cool and coated it with salted grated coconut and pour palm sugar syrup.

Kuih Lopes Segitiga

Bahan-bahan

500 gram beras pulut

2 sudu besar paste kapur makan
½ biji kelapa diparut hanya bahagian putih
2 ketul gula Melaka
Daun pandan
Daun pisang serta lidi untuk meyemat
Tali kain / tali raffia
Garam
 
Langkah-langkah

  1. Beras pulut dibersih dan direndam bersama larutan kapur sirih selama 2 – 3 jam.
  2. Tos beras dan gaul dengan garam.
  3. Daun pisang dibersih, dipotong dan dilayur di atas api seketika untuk melembutkannya.
  4. Daun pisang dilipat menjadi kelongsong segitiga.
  5. Isikan kelongsong segitiga dengan beras pulut yang ditoskan, padatkan beras dalam kelonsong.
  6. Semat daun dengan lidi untuk mengetatkannya.
  7. Siapkan 2 – 3 biji dan diikat dengan tali kain/raffia untuk mengelak beras daripada terkeluar.
  8. Masukkan kelosong segitiga yang diikat ke dalam periuk dan isikan air sehingga melebihi paras kelosong. 
  9. Masukkan daun pandan dan rebus selama 2 – 3 jam.
  10. Sediakan kelapa dicampur garam dan dikukus selama 2 – 3 minit.
  11. Sediakan air gula Melaka yang dimasak bersama sedikit air.
  12. Setelah kuih lopes masak, sejukkan seketika dan gaulkan dengan kelapa dan dihidang bersama air gula.
