SUP MERAH BEREMPAH TULANG KAMBING / SPICY LAMB BONE RED SOUP





Spicy Lamb Bone Red Soup

Ingredients

1 kg lamb bones
Flour
Salt
Sugar
2 eggs beaten
Oil for frying

Ingredients A

1 tablespoon coriander powder
1 tablespoon cumin powder
1 tablespoon aniseed powder
1 teaspoon coarsely ground black pepper

Ingredients B blended

1 celery sticks
2 inches carrots
4 red chillies
5-6 bird’s eye chilli
1 onions
4 garlic

Ingredients C

3 tablespoon homemade chilli paste
1 teaspoon homemade multipurpose paste
1 teaspoon homemade ginger garlic paste
1 tablespoon chilli sauce
1 tablespoon tomato sauce
1 small can tomato paste
1 tablespoon chilli powder

Garnishing

Parsley
Spring onion
Fried onions

Methods
  1. Bones washed and powdered with wheat flour. Let stand for 15 minutes, washed the flour and drained.
  2. Boil bones together with ingredients A, sugar and salt in a pressure cooker for 1 – 1½ hour.
  3. Sauté until fragrant ingredients B then put ingredients C and mix well. Add lamb broth if too thick.
  4. Put the cooked lamb bones and mix well, bring to a boil.
  5. Pour the beaten egg and let a moment before stirred.
  6. Serve with bread. Garnish with garnishing ingredients.
Sup Merah Berempah Tulang Kambing

Bahan-bahan

1 kg tulang kambing
Tepung gandum
Garam
Gula
2 biji telur dipukul
Minyak untuk menumis

Bahan A

1 sudu besar serbuk ketumbar
1 sudu besar serbuk jintan putih
1 sudu besar serbuk jintan manis
1 sudu teh serbuk lada hitam

Bahan B dikisar

1 batang saleri
2 inci lobak merah
4 cili merah
5-6 cili padi
1 bawang besar
4 ulas bawang putih

Bahan C

3 sudu besar cili kisar buatan sendiri
1 sudu besar pes pelbagai guna buatan sendiri
1 sudu besar pes halia bawang putih buatan sendiri
1 sudu besar sos cili
1 sudu besar sos tomato
1 tin kecil pes tomato
1 sudu teh serbuk cili

Bahan hiasan

Daun sup
Daun bawang
Bawang goreng

Langkah-langkah
  1. Tulang dibasuh dan dilumur dengan tepung gandum. Biarkan selama 15 minit, cuci tepung dan toskan.
  2. Rebus tulang bersama bahan A, gula dan garam di dalam periuk tekanan selama 1 - 1½ jam.
  3. Tumiskan bahan B sehingga naik bau dan masukkan bahan C dan digaul rata. Tambahkan air rebusan tulang jika terlalu pekat.
  4. Masukkan tulang yang telah empuk dan gaul rata, biarkan mendidih.
  5. Curahkan telur yang dipukul dan biarkan seketika sebelum dikacau rata.
  6. Hidangkan dengan roti. Hiaskan dengan bahan hiasan.
