PENGAT JAGUNG MANIS / SWEET CORN WITH COCONUT MILK DESSERT



Sweet Corn With Coconut Milk Dessert

Ingredients

1 can cream styled corn (approx 425 grams)
200 grams sweet potatoes, cubed
500 ml water
1 pandan leaf, tied into a knot
1 tablespoon pearl sago
Sugar to taste
Salt to taste
150 ml thick coconut milk (diluted or extracted from ½ coconut)
Chopped mango (optional)
Coarsely Crushed peanut (optional)

Method

  1. Place sweet potatoes and water in a medium-sized pan and bring to the boil. Add pandan leaf. 
  2. Place sago in a small strainer and rinse briefly under the tap. 
  3. Add pearl sago and continue cooking, stirring every now and then until sago is transparent or about 10 minutes.
  4. Add the sugar and stir until dissolved before adding the salt and coconut milk.
  5. Add cream styled corn, allow mixture to come back to the boil, stirring constantly over medium heat to prevent the coconut from curdling.
  6. Simmer for two to three minutes before taking pan off the heat. 
  7. Serve either warm or chilled as a tea time treat or dessert.
  8. Garnish with mango and crushed peanut.
Pengat Jagung Manis
Bahan-bahan

1 tin jagung gaya krim (lebih kurang 425 gram)
200 gram keledek, dipotong kiub
Air 500 ml
1 daun pandan, terikat kepada simpulan
1 sudu sagu biji
Gula secukup rasa
Garam secukup rasa
150 ml santan pekat (dicairkan atau diekstrak daripada ½ kelapa)
Mangga cincang (optional)
Kacang tanah ditumbuk kasar (optional)

Langkah-langkah
  1. Masukkan keledek dan air ke dalam kuali dan masak sehingga mendidih. Tambah daun pandan.
  2. Letakkan sagu dalam penapis kecil dan bilas secara ringkas di bawah air paip. 
  3. Tambah sagu dan terus masak, kacau sekali sekala sehingga sagu telus atau kira-kira 10 minit.
  4. Masukkan gula dan kacau sehingga semua mencair sebelum memasukkan garam dan santan kelapa.
  5. Tambah jagung, dan biarkan campuran mendidih, sentiasa mengacau dengan api yang sederhana untuk mengelak santan kelapa menjadi berketul.
  6. Reneh selama dua hingga tiga minit.
  7. Hidangkan sama ada panas atau sejuk sebagai minum petang atau pencuci mulut.
  8. Hiaskan dengan mangga dan kacang tanah.

PENGAT KELEDEK-JAGUNG-SAGU / SWEET POTATO-CORN-SAGO CREAMY SAUCE



Sweet Potato-Corn-Sago Creamy Sauce

Ingredients

2 small size sweet potatoes cut into cubes
1 small can of sweet corn (fresh corn can also be used)
2 tablespoons of sago
3 tablespoons brown sugar
3 tablespoons palm sugar
1 cup coconut milk
Water
Salt
Sugar
Pandan leaves

Methods

  1. Boil sago together with sweet potatoes until fluffy and cooked. 
  2. Add sweet corn and pandan leaf, bring to a boil. 
  3. Add palm sugar and brown sugar. Stir well. 
  4. Once uniformly mixed, add coconut milk and stir until boiling. 
  5. Ready to be serve. 
Pengat Keledek-Jagung-Sagu 

Bahan-bahan

2 biji keledek saiz kecil dipotong kiub
1 tin kecil jagung manis (jagung segar juga boleh diguna)
2 sudu besar sagu
3 sudu besar gula perang
3 sudu besar gula Melaka
1 cawan santan pekat
Air
Garam
Gula
Daun pandan

Langkah-langkah

  1. Rebus sagu bersama keledek sehingga kembang dan masak. 
  2. Masukkan jagung manis dan daun pandan, biarkan mendidih. 
  3. Masukkan gula perang dan gula Melaka. Kacau sebati. 
  4. Setelah sekata masukkan santan dan kacau sehingga mendidih. 
  5. Siap untuk dihidang.
