Korean Crispy and Crunchy fried chicken. (Dakgangjeong)

Ingredients:
For Fried Chicken
½ kg chicken wings (about 6 wings) washed and drained
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon minced ginger
5 tablespoons potato starch
2 tablespoons corn starch
1 tablespoon sesame seeds
For the sauce
4 cloves garlic, minced
3 to 4 large dried red chili, seeded, cut crosswise into ⅓ inch pieces (optional)
¼ cup soy sauce
½ cup honey
1 tablespoon vinegar
1 tablespoon brown sugar

Mixed the fried chicken with the sauce.

- Cut off the tip of each wing and chop the wing in half.
- Put the chicken in a bowl and mix with salt, ginger, and ground black pepper by hand.
- Mix potato starch and corn starch in a bowl and dip each wing in the powder to coat it, one by one. Squeeze each wing to press the coating to it tightly.
- Heat cooking oil in frying pan or pot and heat it up for 7 to 8 minutes over high heat.
- Once it’s hot enough start frying by sliding the coated wings one by one into the hot oil and cook for about 12 to 13 minutes, turning over a few times with tongs.
- Take the wings out of the oil and shake them off in a strainer. Turn off the heat, and let the wings sit for a few minutes.
- Reheat the oil and fry the wings again for another 12 to 15 minutes until they all look golden brown and feel super crunchy through the tongs.
For the sauce
- Heat a large non-stick skillet or wok over medium high heat.
- Add 2 tablespoons cooking oil, minced garlic, and the dried red chili.
- Stir with a wooden spoon until fragrant for about 30 seconds.
- Add soy sauce, rice syrup, and vinegar. Stir with a wooden spoon and let it bubble for a few minutes.
- Add the brown sugar and continue stirring. Remove from the heat. Set aside.
Mixed the fried chicken with the sauce.
- When the chicken is done, reheat the sauce until it bubbles.
- Add the hot chicken and mix well with a wooden spoon to coat.
- Remove from the heat and transfer the coated chicken to a large platter.
- Sprinkle some sesame seeds over top and serve immediately.

Bahan-bahan
Untuk Ayam Goreng
½ kg kepak ayam (kira-kira 6 sayap) dibasuh dan toskan
½ sudu teh garam
½ sudu teh serbuk lada hitam
1 sudu teh halia cincang
5 sudu besar tepung kentang
2 sudu besar tepung jagung
1 sudu besar biji bijan
Untuk sos
4 ulas bawang putih, cincang
3-4 batang cili kering, potong melintang kepada kepingan ⅓ inci
¼ cawan kicap
½ cawan madu
1 sudu besar cuka
1 sudu besar gula perang

Langkah-langkah
Ayam goreng
- Potong hujung kepak dan potong sayap pada separuh.
- Letakkan ayam di dalam mangkuk dan campurkan garam, halia dan lada hitam.
- Campurkan tepung kentang dan tepung jagung ke dalam mangkuk dan gaul setiap kepak satu persatu. Perah setiap kepak untuk melekatkan campuran tepung.
- Panaskan minyak masak dalam kuali atau periuk selama 7 hingga 8 minit dengan api yang tinggi.
- Setelah minyak cukup panas, masukkan kepak bersalut satu demi satu ke dalam minyak panas dan biarkan selama kira-kira 12 hingga 13 minit, balikkan dengan penyepit.
- Keluarkan kepak daripada minyak dan toskan dalam penapis. Padamkan api, dan biarkan kepak menjadi sejuk untuk beberapa minit.
- Panaskan minyak dan goreng kepak selama 12 hingga 15 minit sehingga kelihatan kekuningan dan rasa kerangupan menggunakan penyepit.
- Panaskan kuali tidak melekat besar atau kuali dengan api yang sederhana tinggi.
- Tambah 2 sudu besar minyak masak, bawang putih cincang, dan cili merah kering.
- Kacau dengan sudu kayu sehingga wangi selama kira-kira 30 saat.
- Tambah kicap, madu dan cuka. Kacau dengan sudu kayu dan biarkan ia gelembung untuk beberapa minit.
- Tambah gula perang dan terus kacau. Ketepikan.
- Panaskan semula sos.
- Masukkan ayam panas dan gaul dengan sudu kayu supaya menjadi lapisan sos.
- Masukkan ayam bersalut ke dalam pinggan yang besar.
- Taburkan sedikit bijan ke atasnya dan hidangkan segera.
