Chicken in Creamy Hot Sauce
Ingredients
½ chicken cut into small pieces (about 1 kg weight)
1 onion sliced
2 cloves garlic sliced
1 tablespoon homemade ginger-garlic paste
2 tablespoons homemade multipurpose paste
5 tablespoons homemade blended chilli paste
1 stalk lemon grass, crushed
2 lime leaves
1 turmeric leaf
5 clove candle nut
5 – 7 bird’s eye chilli
250 ml coconut milk
Salt
Sugar
Dried tamarind
Oil for frying
Methods

½ ekor ayam dipotong kecil (lebih kurang 1 kg berat)
1 biji bawang besar dimayang
2 ulas bawang putih dimayang
1 sudu besar pes halia-bawang putih
2 sudu besar pes serbaguna
5 sudu besar pes cili kisar
1 batang serai dititik
2 helai daun limau
1 helai daun kunyit
5 ulas buah keras
5 – 7 cili padi
250 ml santan

Asam keping
Minyak untuk menumis
Langkah-langkah

Methods
- Sauté sliced garlic, onions and all the paste until fragrant.
- Pound candle nut and bird’s eye chilli. Sautéed it.
- Add lemon grass, lime leaves and dried tamarind.
- Add chicken and stir until well blended.
- Add coconut milk and let stand until chicken is cooked.
- Add salt and sugar to taste, add turmeric leaves.
- Ready to be serve.

Langkah-langkah
- Tumiskan bawang putih, bawang besar dan semua pes sehingga naik bau.
- Tumbuk buah keras dan cili padi. Tumiskan.
- Masukkan serai, daun limau dan asam keping.
- Masukkan ayam dan kacau sehingga sebati.
- Masukkan santan dan dibiarkan sehingga ayam masak.
- Perisakan dengan garam dan gula, masukkan potongan daun kunyit.
- Siap untuk dihidang.
