Northern Rice Noodles Soup
Ingredients
1 packet of rice noodles
2 tbsp turmeric powder
2 large onion - (one blended, one cut into small cubes)
2 cloves garlic - blended
10 mm ginger - blended
10 stems dried chili - blended
1 bundle soup spice
1 packet seasoning soup
Sauté spices (cinnamon, star anise, cloves and cardamom)
Boiled meat - garnishing
Long beans - garnishing
Bean Sprouts – garnishing
Tofu – garnishing (cut into cubes)
Lime - garnishing
Spring onion - garnishing
Celery - garnishing
Fried onions - garnishing
Salt
Sugar
Tamarind
Water
Olive oil
Methods
Soup
- Mix blended garlic, ginger and onions with beef. Boil the meat until tender and use meat stock as soup.
- Sauté onions, sauté spices and soup seasoning separately. Once fragrant add all ingredients into the soup.
- Add salt and sugar as a flavor when the soup boiled.
- Soak rice noodles with turmeric powder for 30 minutes. Boil the noodles until cook.
- When soft, drain noodles.
- Sauté blended ingredients until fragrant.
- Add salt, sugar and tamarind juice into the mixture.
- Let it boil and heat until thickened.
- Put aside.
- Fill in the rice noodles in a bowl.
- Pour soup into the bowl and serve.
- Sprinkle the garnish and sambal.
Bahan-bahan
1 paket bihun2 sudu besar serbuk kunyit
2 biji bawang besar - (1 biji dikisar, 1 biji diracik)
2 ulas bawang putih - dikisar
10 mm halia – dikisar
10 batang cili kering – dikisar
1 sup bunjut
1 bungkus perencah sup
Rempah tumisan (kayu manis, bunga lawang, bunga cengkih, buah pelaga)
Daging siap direbus - taburan
Kacang panjang - taburan
Taugeh - taburan
Tauhu - taburan (dipotong kiub)
Limau kasturi - taburan
Daun bawang - taburan
Daun sup – taburan
Bawang goreng - taburan
Garam
Gula
Asam jawa
Air
Minyak zaiton
Langkah-langkah
Sup
- Masukkan bawang putih, halia dan bawang besar yang dikisar rebus bersama daging. Rebus daging sehingga empuk dan air rebusan dijadikan kuah sup.
- Tumiskan bawang, rempah tumisan dan perencah sup berasingan. Setelah wangi masukkan semua bahan tumisan ke dalam sup.
- Setelah mendidih masukkan garam dan gula sebagai perisa.
- Rendam bihun dengan serbuk kunyit untuk selama 30 minit. Rebus bihun sehingga lembut.
- Setelah lembut, toskan bihun.
- Tumiskan bahan yang dikisar sehingga naik bau.
- Masukkan garam, gula dan air asam jawa ke dalam tumisan.
- Biarkan mendidih dan panaskan sehingga pekat.
- Ketepikan.
Hidangan
- Isikan bihun ke dalam mangkuk.
- Sendukkan sup ke dalam mangkuk tersebut.
- Taburkan bahan hiasan dan sambal.
The ones I have in Perak is yellow, but just taugeh only, no long beans or tofu.
