AYAM MASAK MINANG / MINANG DISH CHICKEN

Minang Dish Chicken

Ingredients

½ fresh chicken (approx. 1 kg) cut into small pieces
3 teaspoons turmeric powder
Coconut milk from 1 coconut seed

1 stalk lemongrass - pounded
Dried tamarind
Salt
Sugar
Oil for frying

Blended ingredients

15 dried chilies cut
5-10 bird’s eye chili
½ inch galangal
1 inch ginger
½ inch fresh turmeric
3 cloves of garlic
1 onion
3 candlenut

2 stalks lemongrass
100 grams of dried shrimp
2 kaffir lime leaves (middle vein removed)

Methods

  1. Chicken marinated (for about 15-30 minutes) with turmeric powder and salt. 
  2. Sauté blended ingredients in a pan until fragrant and golden. 
  3. Put pounded lemongrass, dried tamarind and marinated chicken and mix it well. 
  4. Once the chicken is cooked, add coconut milk, salt and sugar to taste. 
  5. After boiling, ready to serve. 
Ayam Masak Minang 

Bahan-bahan

½ ekor ayam segar (1 kg) dipotong kecil
3 sudu kecil serbuk kunyit
2 sudu kecil garam
Santan dari 1 biji kelapa 
1 batang serai dititik
Asam keping
Garam
Gula
Minyak untuk menumis

Bahan dikisar

15 cili kering dipotong
5 – 10 tangkai cili padi
½ inci lengkuas
1 inci halia
½ inci kunyit
3 ulas bawang putih
1 ulas bawang besar
3 biji buah keras
2 batang serai
100 gram udang kering
2 helai daun limau purut (dibuang urat tengah)

Langkah-langkah

  1. Ayam diperap (selama lebih kurang 15 – 30 minit) dengan serbuk kunyit dan garam. 
  2. Tumiskan bahan-bahan dikisar di dalam kuali sehingga naik bau dan garing. 
  3. Masukkan serai yang dititik, asam keping dan ayam yang telah diperap dan digaul rata. 
  4. Setelah ayam masak, masukkan santan, garam dan gula secukup rasa. 
  5. Setelah mendidih, siap untuk dihidang.
