Pansuh Chicken
(Without
the use of bamboo)
Ingredients
½
chicken cut into small pieces
1
cup water
Salt
Coarsely

inches of ginger
1
inch of galangal
2
stalks lemongrass
3
inch ginger flower
4
cloves of garlic
6
shallots

Ingredients
4
inch round cut fresh bamboo shoots
Tapioca
shoots
Fern
shoots
Methods
1. Washed and
drained chicken.
2. Mix the
coarsely ground ingredients in a container filled with chicken.
3. Squeezed salt
together tapioca shoots and fern shoots.
4. Mix well all
ingredients and season with salt.
5. Add the
mixture to the pot and steamed. (Original recipe cooked in bamboo like sticky
rice in bamboo cylinder).
6. Once blended
and cooked, served it with rice.
Ayam Pansuh
(tanpa
mengguna buluh)

ulas bawang putih

ulas bawang merah

inci rebung segar dipotong bulat

Langkah-langkah
1. Ayam dicuci
dan toskan.
2. Gaulkan bahan
yang ditumbuk kasar di dalam bekas yang diisi ayam.
3. Ramaskan garam
bersama pucuk ubi dan pucuk paku.
4. Gaulkan semua
bahan sehingga sebati, perisakan dengan
garam.
5. Masukkan bahan
campuran ke dalam periuk dan dikukus.
(Resepi asal dimasak dalam buluh seperti lemang).
6. Setelah sebati
dan masak, boleh dihidang bersama nasi.
