KARI HIJAU AYAM / CHICKEN GREEN CURRY



Chicken Green Curry

Ingredients

½ chicken cut into small pieces

1 cup coconut milk
2 tablespoons turmeric powder
1 teaspoon coarsely ground black pepper
Salt
Sugar
Dried tamarind sliced 
Oil for cooking and frying

Green curry paste ingredients

1 teaspoon ground cumin

1 teaspoon ground coriander
1 teaspoon ground cinnamon
1 sprig of coriander leaves
1 sprig of Thai basil leaves
1 onion
3 cloves garlic
1 inch ginger
1 inch ginger
1 stalk of green chillies
5 -7 green bird’s eye chillies

Methods

  1. Marinade the chicken with turmeric, black pepper, salt and sugar for 15 minutes.
  2. Fry chicken until golden brown or just let the water dry and p
  3. ut aside, o
  4. r put directly the chicken without frying. 
  5. Blend all the ingredients for green curry paste.
  6. Sauté blended ingredients until fragrant. Concentration depend on your own.
  7. Add coconut milk and mix well and allowed to boil for a while.
  8. Add chicken that has been fried and mixed well with the sauce.
  9. Add dried tamarind sliced, salt and sugar to taste.
  10. Ready to be served with steamed rice.
Kari Hijau Ayam

Bahan-bahan

½ ekor ayam dipotong kecil
1 cawan santan pekat
2 sudu besar serbuk kunyit
1 sudu teh serbuk kasar lada hitam
Garam
Gula
Asam keping
Minyak untuk menumis dan menggoreng

Bahan untuk pes kari hijau

1 sudu teh serbuk jintan putih
1 sudu teh serbuk ketumbar
1 sudu teh serbuk kayu manis
1 tangkai daun ketumbar
1 tangkai daun selasih Thai
1 bawang besar
3 ulas bawang putih
1 inci halia
1 inci lengkuas
1 batang cili hijau
5 -7 cili padi hijau

Langkah-langkah

  1. Perapkan ayam bersama kunyit, serbuk lada hitam, garam dan gula selama 15 minit.
  2. Goreng ayam sehingga berwarna kuning keemasan atau sehingga air dari ayam kering dan ketepikan atau masuk terus ayam tanpa digoreng.
  3. Kisar semua bahan untuk pes kari hijau.
  4. Tumis bahan yang dikisar sehingga naik bau. Kepekatan mengikut kesukaan.
  5. Masukkan santan dan digaul rata dan dibiarkan sehingga mendidih seketika.
  6. Masukkan ayam yang telah digoreng dan digaul menjadi sebati dengan kuah.
  7. Perisakan dengan asam keping, garam dan gula. 
  8. Siap untuk dihidang bersama nasi panas.
