Clams Cook With Lemongrass
Ingredients
½ kg clams
3 stalks lemon grass - 1 stalk cut, 2
crushed
1 tablespoons homemade chilli paste
2 cloves of garlic sliced
2 inch ginger cut lengthwise
2 red chillies cut lengthwise
1 tablespoon of sweet and sour sauce
1 tablespoon of oyster sauce
1 teaspoon ground black pepper
1 lemon
Salt
Sugar
Olive oil
Water
Methods
1.
Wash clams
thoroughly with to remove the sand in the shell.
2.
Squeeze lemons
to get rid of the smell of the soil. Drain and set aside.
3.
Heat the olive
oil and sauté the onion, garlic, ginger, chilli paste, red chilli and
lemongrass until fragrant.
4.
Put water,
tomato sauce, oyster sauce and sweet & sour sauce.
5.
Once boiled,
put black pepper powder, salt and sugar to taste.
6.
Put clams and
mix thoroughly and let sauce boil.
7.
Serve with
white rice.
Lala Masak Serai
Bahan-bahan
½
kg siput lala
3
batang serai – 1 batang dipotong, 2 dititik
1 sudu besar pes cili kering buatan sendiri
2
ulas bawang putih dimayang
2
inci halia dipotong memanjang 1 inci
2
cili merah dipotong memanjang 1 inci
1
sudu besar sos masam manis
1
sudu besar sos tiram
1
sudu teh serbuk lada hitam
1
biji lemon
Garam
Gula
Minyak
zaiton
Air
Langkah-langkah
1. Lala dicuci
sehingga bersih dengan mencuci beberapa kali untuk membuang pasir di dalam
kulit.
2. Perahkan lemon
untuk menghilangkan bau tanah. Tos dan
ketepikan.
3. Panaskan
minyak zaiton dan tumis bawang besar, bawang putih, halia, pes cili kering,
cili merah dan serai sehingga naik bau.
4. Masukkan
sedikit air, sos tomato, sos tiram dan sos masam manis.
5. Setelah
mendidih masukkan serbuk lada hitam, garam dan gula secukup rasa.
6. Masukkan lala
dan kacau sehingga sebati dan biarkan kuah mendidih.
7. Hidangkan
bersama nasi putih.
