Chicken and Jackfruit Cooked Minang’s Style
Ingredients
½
chicken cut into small pieces

stalk lemon grass, crushed

sliced of young jackfruit, boiled and cut
Coconut
milk (1 box 200 ml)
Salt
Sugar

/ pounded Ingredients

stalks lemongrass
5 pieces
candlenut
1
inch ginger
½
inch galangal
1
inch fresh turmeric
1 onion
3
cloves of garlic
1
turmeric leaf
1
kaffir lime leaves
5-7 bird’s
eye chillies
Methods
1. Pound/blend all
blended/pounded ingredients until finely ground.
2. Sauté all blended
ingredients and crushed lemongrass until fragrant and golden.
3. Add the chicken
and mix until uniform. Pour some water and jackfruit.
4. Once the chicken
is cooked add coconut milk and stir until oil separates.
5. Add salt and
sugar to taste.
6. Ready to eat with sambal berlado minang and spicy fried potatoes.
Masak Minang Ayam dan Nangka
Bahan-bahan
½ ekor ayam dipotong kecil
Minyak masak
1 batang serai dititik
Asam keping
Sepotong nangka muda direbus dan dipotong
Santan (1 kotak 200 ml)
Garam
Gula
Bahan-bahan dikisar/ditumbuk
2 batang serai
5 biji buah keras
1 inci halia
½ inci lengkuas
1 inci kunyit
1 bawang besar
3 ulas bawang putih
1 helai daun kunyit
1 helai daun limau purut
5 – 7 batang cili padi
Langkah-langkah
1.
Semua bahan-bahan tumbukan ditumbuk sehingga
lumat.
2.
Tumiskan semua bahan tumbukan dan serai yang
dititik sehingga naik bau dan garing.
3.
Masukkan ayam dan gaul sehingga sekata. Masukkan sedikit air dan nagka.
4.
Setelah ayam masak masukkan santan dan kacau
sehingga pecah minyak.
5.
Perisakan dengan garam dan gula.
6.
Siap untuk dimakan dengan sambal berlado minang dan ketang goreng berlado.
