SOTO AYAM (mengguna rempah soto buat sendiri) / CHICKEN SOTO (using homemade soto spices)







Chicken Soto (using Homemade Spices)
Ingredients

1 chicken, cut in half, boiled and shredded
1 tablespoon black pepper
2 stalks lemon grass bruised
Salt
Sugar
Coconut milk
Compressed rice

Dry spices ingredients (spices)

3 tablespoons powdered aniseed
3 tbsp cumin powder
1 tablespoon ground cinnamon
1 tablespoon powdered ginger
1 teaspoon ground nutmeg
1 tablespoon black pepper pollen
1 tablespoon white pepper powder

Wet ingredients (blended) (herbal)

2 large onions
4 garlic
1 inch ginger
½ inch galangal
1 stalk lemongrass
1 inch turmeric
2 candle nut
5 green bird’s eye chillies
2 green chillies

Garnishing
Onion spring
Parsley

Bean sprout
Potatoes patties
Fried onion
Soy sauce mixed with chilli

Methods

  1. Braised chicken with salt, sugar, lemon and black pepper. Take out the chicken left the broth.
  2. Mix well all dry spices, pour water into mixed spices to form paste.
  3. Sauté wet ingredients until fragrant.
  4. Put the spices paste and stir until well blended.
  5. Once well mixed, add the mix to the chicken broth and stir evenly.
  6. Add coconut milk and stir well.
  7. Seasoned with salt and sugar.
  8. Ready to be served with compressed rice, potatoes patties and other garnishing.
Soto Ayam (menggunakan rempah buat sendiri) 

Bahan-bahan

1 ekor ayam dipotong dua, direbus dan isi dicarik
1 sudu besar serbuk lada hitam
2 batang serai dititik
Garam
Gula
Santan pekat
Nasi impit

Bahan kering (rempah)
3 sudu besar serbuk jintan manis
3 sudu besar serbuk jintan putih
1 sudu besar serbuk kayu manis
1 sudu besar serbuk halia
1 sudu teh serbuk pala
1 sudu besar serbuka lada hitam
1 sudu besar serbuk lada putih

Bahan basah dikisar (herba)

2 bawang besar
4 bawang putih
1 inci halia
½ inci lengkuas
1 batang serai
1 inci kunyit
2 biji buah keras
5 cili padi hijau
2 cili hijau

Untuk hiasan

Daun bawang
Daun sop

Taugeh
Begedel
Bawang goreng
Kicap cili
Langkah-langkah
  1. Ayam direbus dengan garam, gula, serai dan serbuk lada hitam. Keluarkan ayam dan biarkan air rebusan.
  2. Rempah ratus kering digaul sebati, dicampurkan air menjadi pes.
  3. Tumiskan bahan kisaran basah sehingga naik bau.
  4. Masukkan pes rempah, dan dikacau sehingga garing.
  5. Setelah bercampur sebati, masukkan rempah ke dalam air rebusan ayam dan dikacau sekata.
  6. Masukkan santan kelapa dan kacau.
  7. Perisakan dengan garam dan gula.
  8. Siap untuk dihidang dengan nasi impit, begedel dan lain-lain hiasan.
