DAGING GORENG HALIA LADA HITAM / FRIED BEEF WITH GINGER AND BLACK PEPPER

Fried Beef with Ginger and Black Pepper

Ingredients

500 gram beef thinly cut
2 tablespoons of turmeric powder
1 teaspoon coarse ground black pepper for marinating
5 long beans cut in 1-inch lengthwise
1 inch ginger cut lengthwise
1 inch carrots cut lengthwise
1 red chilli cut diagonally
1 onion sliced
2 cloves of garlic sliced
1 sprig basil leaves, some shredded, some for garnish
2 teaspoon homemade multipurpose paste
1 tablespoon black pepper sauce
1 tablespoon of oyster sauce
1 teaspoon ground black pepper for seasoning
10 cloves of cashew nuts
Salt
Sugar
Olive oil

Methods

1.    Marinated cut meat using turmeric powder, salt, multi-purpose paste and garlic paste.
2.    Heat the olive oil in a pan and sauté the onion, garlic, garlic-ginger paste and multi-purpose paste until fragrant.
3.    Put the marinated meat and mix well until become soft.
4.    Add carrot, cut ginger, black pepper sauce, oyster sauce and mix until well blended.
5.    Once blended put long beans, cut red chilli, basil and stir until blended.
6.    Season it with salt, sugar and black pepper.
7.    Serve it and decorated with cashew nuts and basil leaves.

Daging Goreng Halia Lada Hitam

Bahan-bahan

500 gm daging lembu dipotong nipis
2 sudu besar serbuk kunyit
1 sudu teh serbuk kasar lada hitam
5 batang kacang panjang dipotong 1 inci
1 inci halia dipotong memanjang
1 inci lobak merah dipotong memanjang
1 cili merah dipotong memanjang
1 bawang besar dimayang
2 ulas bawang putih dimayang
1 tangkai daun selasih, sebahagian dimayang, sebahagian untuk hiasan
1 sudu besar sos lada hitam
1 sudu besar sos tiram
1 sudu teh serbuk lada hitam
10 ulas biji gajus
Garam
Gula
Minyak zaiton

Langkah-langkah

1.    Daging yang dipotong diperap menggunakan serbuk kunyit, garam, pes pelbagai guna dan pes halia bawang putih.
2.    Panaskan minyak zaiton dalam kuali dan tumiskan bawang besar, bawang putih, pes pelbagai guna dan pes halia-bawang putih sehingga naik bau.
3.    Masukkan daging yang diperap dan gaul hingga sebati dan menjadi lembut.
4.    Masukkan lobak merah, halia, sos lada hitam, sos tiram dan gaul sehingga sebati.
5.    Setelah semua sebati masukkan kacang panjang, cili merah, daun selasih dan kacau sehingga sebati.
6.    Perisakan dengan garam, gula dan serbuk lada hitam.
7.    Hidangkan dengan hiasan biji gajus dan daun selasih.
