LEMAK CILI PADI NANGKA / JACKFRUIT WITH HOT CREAMY COCONUT MILK


Jackfruit in Coconut Milk

Ingredients

500 grams of jackfruit (use only the flesh)
50 grams anchovies - soaked
Coconut milk from one coconut/palm oil milk
1 turmeric leaf
3 stack Basil leaf
1 stalk lemon grass, pounded
1 tablespoon turmeric powder
Salt
Sugar
Tamarind/dates vinegar
Water

Blended Ingredients

10 stalks bird’s eye chilies
10 cm galangal
10 cm ginger
5 cm fresh turmeric
3 inches turmeric leaves
1 stalk lemon grass
75 gram anchovies

Methods
  1. Boil the processed jackfruit until tender. Put aside
  2. In a saucepan add about 1 liter of water.
  3. Put the ingredients that have blended, soaked anchovies and turmeric powder.
  4. Put tamarind/dates vinegar.
  5. After that, add coconut milk gradually.
  6. After all mixture well blended, stir and add salt, sugar, cut turmeric leaf and basil leaf.
  7. Put boiled jackfruit.
  8. After boiled, turn off the heat and ready to be served.
Masak Lemak Cili Padi Nangka

Bahan-bahan

500 gm nangka yang diambil isi
50 gm ikan bilis - direndam
Santan kelapa dari satu biji kelapa/santan sawit
1 helai daun kunyit – separuh dikisar dan separuh dimasuk ke dalam kuah
3 tangkai daun selasih
1 batang serai dititik
1 sudu besar serbuk kunyit
Garam
Gula
Asam keping / Cuka kurma
Air

Bahan dikisar

10 tangkai cili padi
10 cm lengkuas
10 cm halia
5 cm kunyit hidup
3 inci daun kunyit
1 batang serai
75 gm ikan bilis

Langkah-langkah
  1. Rebus nangka yang telah diproses sehingga lembut. Ketepikan.
  2. Dalam periuk masukkan air lebih kurang 1 liter. 
  3. Masukkan bahan-bahan yang telah dikisar, ikan bilis dan serbuk kunyit. Masukkan asam keping/cuka kurma.
  4. Selepas itu masukkan santan sedikit demi sedikit.
  5. Setelah semuanya sebati, kacau dan masukkan garam, gula, daun kunyit dan daun selasih.
  6. Masukkan nangka yang telah direbus.
  7. Setelah mendidih matikan api dan siap untuk dihidang.
