MEE GORENG MAMAK / MAMAK STYLE FRIED NOODLE





Mamak Style Fried Noodle

Ingredients

1 kg noodles
200 grams of bean sprouts
50 grams chives
1 group vegetable mustard
3 cloves of garlic blended
1 large onion blended
1 cm ginger blended
2 tablespoons multi usage paste
3 tbsp chili paste
2 tablespoons soy sauce
1 tablespoon of oyster sauce
1 tablespoon of tomato sauce
2 pieces of fried tofu cut into cubes
100 grams of chicken flesh cut into cubes
100 grams of meat cut into cubes
½ teaspoon of dates vinegar
Salt
Sugar
Olive oil
Water

Methods

1.    Yellow noodles soaked, drained and tossed.
2.    Heat the olive oil and sauté blended ingredients, multi usage paste and chili paste.
3.    Once the mixture fragrant, put cubed chicken and meat. Stir until well blended.
4.    Put all the sauces and stir until smooth and come to boil.
5.    If the mixture becomes thick add a little water. Season the mixture with salt, sugar and dates vinegar.
6.    Once the mixture well blended, put noodles and stir until all noodles are coated with a paste.
7.    Put tofu, chives and vegetables mustard, continue stirring until wilted then add bean sprouts, stir briefly.  Ready to serve.

Mee Goreng Ala Mamak

Bahan-bahan

1 kg mee kuning
200 gram taugeh
50 gram kucai
1 gugus sayur sawi
3 ulas bawang putih dikisar
1 bawang besar dikisar
1 cm halia dikisar
2 sudu besar pes serbaguna
3 sudu besar cili kisar
2 sudu besar kicap
1 sudu besar sos tiram
1 sudu besar sos tomato
2 ketul tauhu digoreng dipotong kiub
100 gram isi ayam dipotong kiub
100 gram daging dipotong kiub
½ sudu teh cuka kurma
Garam
Gula
Minyak zaiton
Air

Langkah-langkah

1.    Mee kuning direndam dan toskan.
2.    Panaskan minyak zaiton dan tumiskan bahan-bahan kisaran, pes serbaguna dan cili kisar.
3.    Setelah berbau wangi masukkan isi ayam dan daging yang dipotong kiub.  Kacau sehingga sebati.
4.    Masukkan semua sos dan kicap dan kacau sehingga sebati dan medidih. 
5.    Jika campuran menjadi pekat tambahkan sedikit air.  Perisakan dengan garam, gula dan cuka kurma.
6.    Setelah campuran sebati masukkan mee kuning dan kacau sehingga keseluruhan mee diselaputi dengan pes campuran.
7.    Masukkan tauhu, kucai dan sawi, teruskan kacau sehingga agak layu kemudian masukkan taugeh, kacau seketika.  Setelah sebati boleh dihidangkan.
