Rendang
Ingredients
500 grams of beef
Rendang paste
2 onions *
4 cloves garlic *
1 inch ginger *
½ inch galangal *
½ inch fresh turmeric *
3 stalks lemongrass *
10 chili padi (bird’s eye chili) *
2 pieces of turmeric leaves (finely
chopped ½ pieces for garnishing) *
(*) All materials blended
4 tablespoons homemade chili paste
1 tablespoon of turmeric powder
3 cups palm oil milk
2 tablespoons kerisek (fried coconut)
1 tablespoon brown sugar
Olive oil
Salt
Sugar
Dried tamarind
Methods
1.
Boil meat to
tender.
2.
Heat olive oil
in a pan.
3.
Sauté rendang paste, dried tamarind and turmeric powder until fragrant and
become crisp.
4.
Put boiled
meat and mixed with blended ingredients.
5.
Season it with
salt, brown sugar and sugar.
6.
When the
mixture has well blended put kerisek.
7.
Slowly add in
palm oil milk and stir-fry until oil come out.
8.
After a bit
dry put finely cut turmeric leaves and continue to stir.
9.
When the meat
was tender and the gravy is quite dry, serve with steamed rice, rice cake or
lemang.
Rendang Daging

helai daun kunyit (½ helai dipotong halus untuk taburan) *
(*) semua bahan dikisar

sudu cili kisar buatan sendiri

sudu besar serbuk kunyit

cawan santan sawit
2
sudu besar kerisek
1
sudu besar gula melaka
Minyak
zaiton
Garam
Gula
Asam
keping
Langkah-langkah
1. Daging direbus
seketika supaya lembut.
2. Panaskan
minyak zaiton dalam kuali.
3. Tumiskan semua
pes rendang, asam keping dan serbuk kunyit sehingga naik bau dan menjadi
garing.
4. Masukkan
daging yang direbus dan digaul dengan bahan yang ditumis.
5. Setelah sebati
perisakan dengan garam, gula melaka dan gula.
6. Bila campuran
telah sebati masukkan kerisek.
7. Perlahan-lahan
masukkan santan sawit dan kacau sehingga naik minyak.
8. Setelah agak
kering masukkan daun kunyit yang dipotong halus dan terus mengacau.
9. Apabila daging
telah empuk dan kuah menjadi agak kering, hidangkan bersama nasi, ketupat atau
lemang.
