WEDGES KENTANG DAN SOS PENCICAH BUATAN SENDIRI / HOMEMADE POTATO WEDGES AND DIPPING SAUCE


Kentang Dicuci Dan Dipotong / Washed and Cut Potatoes
Rempah Yang Dicampur / Mixed Spices Used
Kentang Diselaputi Rempah / Potatoes Coated With Spices
Sedia Untuk Dipanggang / Ready to Bake
 Kentang Siap Dipanggang / Baked Wedges
Kentang Dan Sos / Cheesy Sauce with Wedges
Kentang dan Sos / Cheesy Sauce with Wedges
Sos Berkeju / Cheesy Sauce
Homemade Potato Wedges

Ingredients

5 russet potatoes cut into eight portions
1 teaspoon spice mix powder
1 teaspoon coarse herbal mixture powder
½ teaspoon nutmeg powder
½ teaspoon chili powder
1 clove garlic (it is better to use garlic powder)
1 teaspoon coarsely ground black pepper
Salt
Olive oil
Water
Ice Water

Methods

1.    Preheat oven at 200 degrees Celsius.
2.    Washed, scrubbed and rinsed the potato skin. Cut potatoes to eight parts.
3.    Soak for a while in ice water.
4.    Boil water and put a pinch of salt.
5.    Once water is boiling put the soaked potatoes for 2 to 3 minutes.
6.    Take out potatoes and drain until dry. (Wiped to dry if needed)
7.    Put all the dry ingredients and chopped garlic into zipped plastic.
8.    Put the dried potatoes and mix well to coat potatoes evenly.
9.    Prepare a baking tray and arrange the potatoes, sprinkle with olive oil and a little salt.
10. Insert the tray into the preheated oven and bake for 35 t0 45 minutes until it turn to golden brown.
11. Best eaten with cheesy dipping sauce.

Homemade Cheesy Dipping Sauce

Ingredients

100 grams of butter
100 grams of mozzarella cheese
3 tablespoons mayonnaise
2 tablespoons powdered formaggio cheese (optional)
½ cup cooking cream
Coarsely blend black pepper
Salt
Water to be use in double boiling

Methods

1.    Boil water in a pan and place the sauce pan on top (double boiler cooking)
2.    Once sauce pan hot, add butter and let it melt.
3.    After that put mozzarella cheese and stir until melted.
4.    Add the cooking cream to dilute the mixture.
5.    Put coarsely blend black pepper, mayonnaise, powdered cheese and salt to taste.
6.    Once all the ingredients well mixed, scoped it and can be eaten with fried potatoes as dipping sauce.

Kentang Wedges Buatan Sendiri

Bahan-bahan

5 biji kentang russet di belah lapan setiap satu
1 sudu teh serbuk campuran rempah
1 sudu teh serbuk kasar campuran herba
½ sudu teh serbuk pala
½ sudu teh serbuk cili
1 ulas bawang putih (jika ada serbuk bawang putih lebih baik)
1 sudu teh kisaran kasar serbuk lada hitam
Garam
Minyak zaiton
Air untuk merebus
Air ais

Langkah-langkah

1.    Panaskan ketuhar pada suhu 200 darjah Celsius.
2.    Basuh dan cuci kulit kentang.  Belah ketang pada lapan bahagian.
3.    Rendamkan seketika di dalam air batu.
4.    Rebus air sehingga mendidih.  Masukkan sedikit garam.
5.    Setelah air mendidih masukkan kentang yang telah direndam selama 2 – 3 minit.
6.    Keluarkan kentang dan toskan sehingga kering. (jika perlu boleh dilapkan)
7.    Masukkan semua bahan kering dan bawang putih yang dicincang halus ke dalam plastik berzip.
8.    Masukkan kentang yang telah kering dan gaul rata.
9.    Sediakan dulang pembakar dan susun kentang serta renjiskan dengan minyak zaiton dan sedikit garam.
10. Masukkan dulang ke dalam ketuhar yang telah dipanaskan dan panggang selama 35 – 45 minit  sehingga bertukar kuning keemasan.
11. Sedap dimakan dengan sos pencicah berkeju.

Sos Pencicah Berkeju Buatan Sendiri

Bahan-bahan

100 gram mentega
100 gram keju mozzarella
3 sudu mayonnaise
2 sudu besar serbuk keju formaggio (optional)
½ cawan cooking cream
Kisaran kasar lada hitam
Garam
Air untuk ‘double boiling’

Langkah-langkah

1.    Panaskan air dalam kuali dan letakkan periuk untuk mengacau sos (double boiler)
2.    Masukkan mentega dan biarkan sehingga cair.
3.    Setelah itu masukkan keju mozzarella dan kacau sehingga cair.
4.    Tambahkan cooking cream bagi mencairkan campuran.
5.    Masukkan serbuk kasar lada hitam, mayonnaise, serbuk keju dan garam secukup rasa.
6.    Setelah semua bahan sebati, boleh dimakan bersama kentang goreng sebagai pencicah.
