IKAN KEMBUNG KUKUS MASAK LEMAK ASAM / STEAMED MACKEREL IN CREAMY SOUR SAUCE


Steamed Mackerel in Creamy Sour Sauce


Ingredients

2 pieces of steamed mackerel cut into two parts
5-7 pieces of bamboo star fruit, halved
2 onions, 1 coarsely ground, 1 cut into four parts
½ inch ginger, coarsely ground
1 clove garlic, coarsely ground
50 grams of anchovy (also can be dried shrimp), coarsely ground
1 stick of red chilies, cut diagonal
1 stick of green chilies, cut diagonal
2 pieces of dried tamarind peel (can also use tamarind paste)
Water
Coconut milk
Salt
Sugar

Methods

1.    Anchovies soaked prior to tender and coarsely ground.
2.    Sauté coarsely ground ingredients, red and green chili until fragrant.
3.    Add water and stir well mixed.
4.    After boiling, add bamboo star fruit, quartered onions, tamarind peel and coconut milk.
5.    Add salt and sugar to taste. Stir until well blended.
6.    Put steamed mackerel and let it simmer for a while.
7.    Ready to serve.

Ikan Kembung Kukus, Masak Lemak Asam

Bahan-bahan

2 ekor ikan kembung kukus, dipotong dua bahagian
5-7 biji belimbing buluh, dibelah dua
2 biji bawang besar, 1 biji ditumbuk kasar, 1 biji dibelah empat
½ inci halia, ditumbuk kasar
1 ulas bawang putih, ditumbuk kasar
50 gm ikan bilis (juga boleh diguna udang kering), ditumbuk kasar
1 batang cili merah, dipotong serong
1 batang cili hijau, dipotong serong
2 keping asam keping (juga boleh guna asam jawa)
Air
Santan
Garam
Gula

Langkah-langkah

1.    Ikan bilis direndam lebih dahulu supaya lembut dan ditumbuk kasar.
2.    Tumiskan bahan-bahan yang ditumbuk kasar, cili merah dan hijau sehingga naik bau.
3.    Masukkan air dan kacau agar bahan sebati.
4.    Setelah mendidih masukkan belimbing buluh, bawang besar dibelah empat, asam keping dan santan. 
5.    Masukkan garam dan gula secukup rasa.  Kacau sehingga sebati. 
6.    Masukkan ikan kembong kukus dan biarkan mendidih seketika.
7.    Setelah itu siap untuk dihidang.
