Chicken Soto
Ingredients
½
chicken cut into two parts
1
stick of cooked compressed rice (ready to eat available at shop)
1
sachet of soto spices powder
1
sachet of korma spices powder
1
stalk lemon grass, bruised
1
onion, cubed
3
cloves garlic, ground
2
cm ginger ground
1
bunch of 4 sauté spices (cinnamon, cardamom, cloves and star anise)
1
packet soup bunjut

sauces + bird’s eye chili pounded / minced finely

patties (ingredients - potatoes, minced meat, flour, coriander leaves and eggs)
Methods
Soup
preparation
1. Boil chicken
with lemon grass, grounded ginger, grounded garlic, soup bunjut and bring to
boil.
2. After boiling,
remove the chicken and baked for a while to avoid stale quickly. (Shredded
chicken to be used as garnishing, put the chicken bones back into the soup).
3. Heat pan and
add olive oil. Sauté onion with 4 sautés spices until fragrant.
4. Mix the soto
and korma spices powder with some water, stir until smooth.
5. Add to the pan
and stir-fry with onions. After well blended, pour into the pot containing soup.
Stir it well.
6. Add salt,
sugar and dates vinegar, let it boil.
7. After boiled,
ready to be served with cooked compressed rice. Sprinkle with parsley leaves,
spring onions, bean sprouts, potato patties, shredded chicken meat and mixed of chili and soy sauce.

patties preparation
1. Boiled
potatoes, mashed it with minced beef meat, ground dried shrimp, parsley leaves,
a little flour and salt.
2. Shaped it either
round or flat. Dipped into a stirred egg and fried it.

batang nasi empit siap dimasak (beli yang tersedia untuk dimakan)

peket rempah soto

peket rempah korma

batang serai dititik

biji bawang besar dipotong kiub

ulas bawang putih dikisar

cm halia dikisar

tumis 4 serangkai (kulit kayu manis, buah pelaga, bunga cengkih dan bunga
lawang)

(bahan - kentang, daging kisar, tepung gandum dan telur)
Langkah-langkah
Penyediaan

1. Rebus ayam
bersama serai, halia, bawang putih yang dikisar dan sup bunjut sehingga
mendidih.
2. Setelah
mendidih keluarkan ayam dan dibakar sekejap untuk mengelak dari cepat basi.
(Isi ayam dicarik-cari untuk diguna sebagai bahan tabur, tulang ayam dimasukkan
semula ke dalam sup).
3. Panaskan kuali
dan masukkan minyak zaiton. Tumiskan
bawang besar bersama rempah tumis empat serangkai sehingga naik bau wangi.
4. Campurkan
sedikit air bersama serbuk rempah soto dan korma, kacau sehingga sebati.
5. Masukkan ke
dalam kuali dan tumiskan bersama bawang.
Setelah pecah minyak tuangkan ke dalam periuk yang mengandungi kuah sup.
Kacau sehingga sebati.
6. Masukkan
garam, gula dan cuka kurma, biarkan sehingga mendidih.
7. Setelah
mendidih siap untuk dihidang bersama nasi empit. Taburkan daun sup, daun sup, daun bawang,
taugeh, begedel, carikan isi ayam dan kicap cili padi.
Penyediaan
begedel
1. Kentang yang
direbus, dilenyek bersama daging kisar, udang kering ditumbuk, daun sup,
sedikit tepung gandum dan garam.
2. Bentukkan
mengikut kesukaan samada bulat atau leper.
Dicelup ke dalam telur yang dikacau dan digoreng.
