RED VELVET CAKE

My first attempt at making the heavenly red velvet cake. This cake is dramatically looking with its red colour...it turned out to be so soft, moist & velvety textures. Alhamdulillah..thanks to my mum for assisting me in making this cake!

Red Velvet Cake

Ingredients

250 gm cake flour (we used superfine flour)
200 gm butter
1/2 tsp salt
160 gm castor sugar
2 grade A eggs
1 tsp vanilla essence 
240 ml buttermilk
4 tsp red colouring
1 tsp vinegar (we used lemon juice)
1 tsp sodium bicarbonate
(we added 3 tbs cocoa powder)

Cream Cheese frosting
250 gm cream cheese
1 cup castor sugar (we used icing sugar)
2 tsp fresh milk to soften (skipped)

Methods

Cake
  1. Prepare buttermilk by mixing 1 cup fresh milk (we replaced with evaporated milk) with 1 tsp lemon juice. Let it mix for 10 - 15 minutes.
  2. Preheat oven at 180 deg Celsius. Grease the pan with butter
  3. In a mixing bowl, put sugar and butter and beat it well until soft for about 1 - 2 minutes.
  4. Add eggs one by one and beat it until the mixture expand.
  5. In the buttermilk bowl add red colouring and mix it.
  6. Reduced the mixer speed and pour the mixture of flour and cocoa with buttermilk alternately
  7. In a small bowl, mix sodium bicarbonate with lemon juice until bubbling.  Immediately pour into cake mixture.
  8. Pour the mixture into greased pan and bake it for 30 - 40 minutes.
  9. Once cool cut the cake into two equal portion.
  10. Spread cream frosting on top of the on portion cake and combine it with another portion on top of it.
  11. Spread and decorate the cake with cream frosting.

Cream frosting.
  1. Mix cream cheese and butter.
  2. Beat it until soft.  Add sugar and vanilla essence.  




Kek Baldu Merah

Bahan-bahan

250 gm tepung kek (kami menggunakan tepung halus)
200 gm mentega
1/2 sudu kecil garam
160 gm gula kastor
2 gred A telur
1 sudu kecil esen vanilla
240 ml mentega-susu
4 sudu kecil pewarna merah
1 sudu kecil cuka (kami menggunakan jus lemon)
1 sudu teh natrium bikarbonat
(kami tambah 3 sudu makan serbuk koko)

Aising Krim Keju
250 gm krim keju
1 cawan gula kastor (kami menggunakan gula aising)
2 sudu kecil susu segar untuk melembutkan (tidak digunakan)

Langkah-langkah

Kek

1.    Menyediakan mentega-susu dengan mencampurkan 1 cawan susu segar (kami gantikan dengan susu cair) dengan 1 sudu the jus lemon.  Biarkan ia bercampur selama 10 – 15 minit.
2.    Panaskan oven pada suhu 180 darjah Celsius. Gris bahagian dalam acuan dengan mentega.
3.    Dalam mangkuk, letakkan gula dan mentega dan pukul dengan baik sehingga lembut selama lebih kurang 1 - 2 minit.
4.    Tambah telur satu persatu dan pukul sehingga campuran itu berkembang.
5.    Di dalam mangkuk mentega-susu tambah pewarna merah dan kacau.
6.    Dikurangkan kelajuan pengadun dan tuangkan adunan tepung dan  koko dengan mentega berselang-seli.
7.    Dalam sebuah mangkuk kecil, campurkan sodium bikarbonatdengan jus  lemon sehingga berbuih. Tuangkan segera ke dalam adunan kek.
8.    Tuangkan adunan ke dalam kuali yang disapu mentega dan bakar selama 30 - 40 minit.
9.    Setelah sejuk potong kek kepada dua bahagian.
10. Sapukan aising krim di atas kek bahagian atas dan menggabungkan dengan bahagian lain di atasnya.
11. Sapu dan menghias kek dengan aising krim.


Aising krim keju.

1.    Campurkan krim keju dan mentega.
2.    Pukul ia sehingga lembut. Tambah gula dan esen vanila.
