AYAM GORENG BEREMPAH / SPICY FRIED CHICKEN


Spicy Fried Chicken

Ingredients

1 chicken cut small
1 large onion - blended
2 cloves garlic, white - blended
5 mm ginger - blended
1 stalk lemon grass - blended
5 mm galangal - blended
¼ teaspoon fennel seeds
¼ teaspoon cumin seeds
¼ teaspoon coriander
¼ teaspoon black pepper - coarse grind
2 teaspoons chili powder – coarse blended
2 tablespoons curry powder (optional)
1 sprig curry leaves
A slice of lemon
Salt
Sugar / honey
Cooking oil - fry
olive Oil

Methods
Bottom of Form

1.    Clean the chicken and marinate for 30 minutes or more with all blended ingredients, fennel seeds, cumin, coriander, black pepper, chili powder, curry powder, curry leaves and sprinkled with olive oil.
2.    Put salt, sugar/honey and lemon to taste.
3.    Heat wok and add oil for deep frying.
4.    Once hot, add marinated chicken and fry for about 10 minutes over low fire.  Turn the chicken until golden.
5.    Remove chicken from wok when turn golden and ready to be serve with steamed rice in coconut milk or steamed chicken rice.


Ayam Goreng Berempah

Bahan-bahan

1 ekor ayam dipotong kecil
1 ulas bawang besar – dikisar
2 ulas bawang puteh – dikisar
5 mm halia – dikisar
1 batang serai – dikisar
5 mm lengkuas – dikisar
¼ sudu teh jintan manis
¼ sudu teh jintan putih
¼ sudu teh ketumbar
¼ sudu teh lada hitam - dikisar kasar
2 sudu teh serbuk cili - dikisar kasar
2 sudu besar serbuk kari (optional)
1 tangkai daun kari
Sepotong lemon
Garam
Gula/madu
Minyak masak – menggoreng
MInyak zaiton

Langkah-langkah

1.       Bersihkan ayam dan diperap selama 30 minit atau lebih dengan semua bahan dikisar,  jintan manis, jintan putih, ketumbar lada hitam, serbuk cili, serbuk kari, daun kari dan direnjis minyak zaiton.
2.       Garam, gula/madu dan lemon secukup rasa
3.       Panaskan kuali dan masukkan minyak untuk menggoreng.
4.       Setelah panas masukkan ayam yang telah diperap dan digoreng selama lebih kurang 10 minit dengan api kecil.  Terbalikan ayam sehingga garing.
5.       Angkat ayam setelah garing dan siap untuk dihidang untuk dimakan dengan nasi lemak atau nasi ayam kukus.
