* Petai - Parkia speciosa (bitter bean)
Tempoyak –
Fermented Durian
Ingredients
300 gm tapioca shoots – cut finely
3 board parkia speciosa (bitter bean) - peeled seeds
1 onion - blended
2 cloves garlic - blended
5 mm ginger - blended
5 mm turmeric - blended
5 mm galangal - blended
10 bird’s eye chilies - blended
2 red chilies - blended
2 turmeric leaves - 1 pieces blended and 1 piece finely cut
1 stalk lemon grass - blended
30 gm anchovies - coarse grind
200 gm coconut milk
3 tablespoons tempoyak
Salt
Sugar
3 cups water
Methods
- Heat water in a pot and add all blended ingredients.
- Put tempoyak and mix thoroughly.
- Put finely cut tapioca shoots, turmeric leaves and petai.
- Let the tapioca shoots and turmeric leaves wither and soft.
- Add coconut milk and stir until well blended. Add salt and sugar to taste.
- After boiling, place in bowl and serve with rice.
Pucuk Ubi Petai Masak Lemak Tempoyak
Bahan-bahan
300 gm pucuk ubi diracik halus
3 papan petai (dikopek biji petai)
1 ulas bawang besar - dikisar
2 ulas bawang putih - dikisar
5 mm halia - dikisar
5 mm kunyit - dikisar
5 mm lengkuas - dkisar
10 biji cili padi - dikisar
2 biji cili merah - dikisar
2 helai daun kunyit - 1 helai dikisar dan 1 helai diracik halus
1 batang serai - dikisar
30 gm ikan bilis - dikisar kasar
200 gm santan pekat
3 sudu besar tempoyak
Garam
Gula
3 cawan air
Langkah-langkah
- Panaskan air dalam periuk dan masukkan semua bahan-bahan dikisar.
- Masukkan tempoyak dan kacau sehingga sebati.
- Masukkan pucuk upi dan daun kunyit yang telah diricik halus dan biji petai yang dibelah.
- Biarkan pucuk ubi menjadi layu dan lembut.
- Masukkan santan dan kacau sehingga sebati. Masukkan garam dan gula secukup rasa.
- Setelah mendidih, masukkan ke dalam mangkuk dan dihidang bersama nasi.
