Peanut Hot Sauce
Kuah Kacang
Ingredients
100 gm of peanuts
2 cloves onions – blended
2 cloves garlic – blended
1 cm ginger-blended
1 cm galangal – blended
1 stalk lemon grass – blended
3 tbsp chili paste (dry chili blended with shallots and shrimp paste)
Tamarind
Brown Sugar / Coconut base sugar
Salt
1 kaffir lime leaf
Olive oil
Methods
1. Peanuts fried without oil. Cool and grind coarse.
2. Heat a wok and sauté blended ingredients. Stir until fragrant.
3.
Pour chili paste and stir until fragrant. Put the kaffir lime leaves.
4.
Put the ground peanuts.
5. Stir until well blended. Pour in tamarind juice, sugar and salt to taste.
6. Gravy should not too thin.
Ready
to eat with fried shrimp

batang serai – dikisar

sudu besar cili kisar (dikisar bersama bawang merah dan belacan)
Asam
jawa
Gula
merah/Gula melaka
Garam

helai daun limau purut
Minyak
zaiton
Langkah-langkah
- Goreng kacang tanah tanpa minyak. Sejukkan dan kisar kasar
- Panaskan kuali dan tumis bahan yang dikisar. Kacau sehinga naik bau.
- Masukkan cili kisar sehingga garing. Masukkan daun limau purut.
- Masukkan kacang tanah yang dikisar.
- Kacau sehingga sebati. Masukkan air asam jawa, gula dan garam secukup rasa.
- Kuah jangan terlalu cair.
- Siap untuk dimakan bersama cucur udang.
