Smashed Chicken
Ingredients
Smashed Chicken
1 chicken cut to 8 parts
1 onion, finely ground
2 cloves garlic, finely ground
2 cm ginger rough ground
2 cm galangal rough ground
1 stalk lemon grass rough ground
½ gross ground ginger flowers
2 table spoon turmeric powder
2 tea spoons coarse ground black pepper
1 lemon cut
Salt
Sugar
Olive oil
Frying oil *
For Hot Sauce
5 stem red chilies – broken
5 stem bird’s eye chilies (if you want spicy thick)
2 cm shrimp paste (I used shrimp paste from Pulau Aman)
50 gm of dried anchovies (dried shrimp can also be used)
1 large shallot – cut

Fresh Vegetable - cabbage, cucumber and wild cosmos shoot (pucuk ulam raja).
Tofu triangle cut and fry.

Methods
For Smashed Chicken
- Boiled chicken and separate chicken broth. Chicken broth will cook as soup to be eaten with rice and chicken.
- Put all materials and well mixed, except that marked* in container for marinating.
- Add the chicken into a container filled with marinating ingredients.
- Mix the chicken with the marinating ingredients to well blend. Marinade for at least 30 minutes.
- Heat the frying pan with frying oil and fried the marinated chicken with a slow flame.
- Lift the crisp chicken and ready to eat with sauce.
- Before serve it with rice and sauce, smashed the chicken to tender it.
- Heat the olive oil, fry anchovies to slightly crispy, set aside.
- Fry red chilies, bird’s eye chili, tomato, onion, garlic and shrimp paste. Fry until slightly wilted.
- Put all the fried ingredients into the mortar and coarsely pound. Add sugar to taste.
- Squeeze lemon / lime. Ready to be served with smashed chicken.

1 ekor ayam dipotong 8 bahagian
1 ulas bawang besar dikisar halus
2 ulas bawang putih dikisar halus
2 cm halia dikisar kasar
2 cm lengkuas dikisar kasar
1 batang serai dikisar kasar
½ kuntum bunga kantan dikisar kasar
2 sudu besar serbuk kunyit
2 sudu kecil lada hitam dikisar kasar
1 potongan lemon
Garam
Gula
Minyak zaiton
Minyak menggoreng *
Sambal5 batang cili merah - dipatahkan
5 batang cili padi (kalau nak pedas lebihkan)
2 cm belacan (saya guna blacan Pulau Aman)
50 gm ikan bilis (Udang kering pun boleh diguna)
1 ulas bawang besar - dipotong
2 ulas bawang putih - dipotong
Minyak zaiton
1 biji tomato
1 potongan lemon atau sebiji limau nipis
Gula
Hidangan sampingan
Sayur - kobis, timun dan pucuk ulam raja.
Tauhu dipotong segitiga dan digoreng
Tempe dipotong segitiga dan digoreng.
Langkah-langkah

- Ayam direbus dan diasingkan air rebusan. Air rebusan dijadikan sup untuk dimakan bersama nasi dan ayam penyet.
- Semua bahan-bahan di atas dicampur sehingga sebati kecuali yang bertanda * didalam bekas yang sesuai untuk memerap.
- Masukkan ayam ke dalam bekas yang diisi bahan perapan.
- Gaul ayam sehingga sebati. Perapkan selama sekurang-kurang 30 minit.
- Panaskan minyak menggoreng dan goreng ayam yang telah diperap dengan api kecil.
- Setelah ayam garing angkat dan siap untuk dimakan bersama sambal.
- Sebelum dihidang ketukkan sedikit untuk memenyetkan ayam.
- Panaskan minyak zaiton, gorengkan ikan bilis biar agak garing, ketepikan.
- Masukkan cili merah, cili padi, tomato, bawang besar, bawang putih dan belacan. Gorengkan seketika sehingga agak layu.
- Masukan semua bahan yang telah digoreng kedalam lesung dan tumbuk sehingga lumat tetapi kasar. Masukkan gula secukup rasa.
- Perahkan lemon/limau nipis. Siap untuk dihidang bersama ayam penyet.
