SAMBAL GORENG / CREAMY SAMBAL GORENG

Antara bahan-bahan / Ingredients
Tempe, tofo, cili padi dan cili hijau / Tempe, tofu, bird's eye chili and green chili
Bawang besar, bawang putih, kentang dan kacang panjang / Onions, garlics, potato and long beans
Cili hijau, cili merah, cili padi dan lobak merah / Green chilli, red chilli, bird's eye chilli and carrot
Tofo kering, soaon dan udang / Dried tofu, glass vermicelli and prawn
Sambal goreng siap untuk dihidang / Ready to serve sambal goreng

Creamy Sambal Goreng

Ingredients

2 onion sliced
4 garlics sliced
2 tablespoons homemade chili paste
10 long beans, cut diagonally
2 inch carrots cut lengthwise
1 piece tempe - cut into cubes and fried
2 pieces tofu - cut into cubes and fried
2 potatoes - cut thin and fried
150 grams of fresh shrimp
1 slice of dried tofu (beancurd sheet) soaked
50 grams glass vermicelli soaked
1 medium red chilli sliced
1 medium green chilli sliced
4 finely bird’s eye chilli minced
½ cup palm oil milk
Salt
Sugar
Olive oil

Methods

1.    Fried tempeh, tofu and potatoes, set aside.
2.    Heat the olive oil and sauté onion, garlic, ginger-garlic paste, multi-usage paste and chilli paste until fragrant. (ranslucent)
3.    Add carrot, shrimp, dried tofu, glass vermicelli, chillies, red chilli and green chilli, continue to stir until well blended.
4.    After all well blended and soft, add the long beans and all fried ingredients and mix it well.
5.    Put the palm oil milk and continue mixing until well blended. Put salt and sugar for seasoning.
6.    Ready to be serve with lodeh sauce (lontong) and rice.

Sambal Goreng 

Bahan-bahan

2 bawang besar dimayang
4 bawang putih dimayang
10 kacang panjang dipotong menyerong
2 inci lobak merah dipotong memanjang
1 keping tempe – dipotong kiub dan digoreng
2 keping tahu – dipotong kiub dan digoreng
2 ketang – dipotong nipis dan digoreng
150 grams udang segar
1 keping tahu kering direndam
50 grams sooun direndam
1 batang cili merah dimayang
1 batang cili hijau dimayang
4 biji cili padi dimayang halus
½ cawan santan sawit
Garam
Gula
Minyak zaiton

Langkah-langkah

1.    Goreng tempe, tahu dan kentang, ketepikan.
2.    Panaskan minyak zaiton dan tumiskan bawang besar, bawang putih, pes halia-bawang putih, pes serbaguna dan pes cili kisar sehingga naik bau.
3.    Masukkan lobak merah, udang, tahu kering, sooun, cili padi, cili merah dan cili hijau, terus mengacau sehingga sebati.
4.    Setelah semua menjadi sebati dan lembut, masukkan kacang panjang dan semua bahan yang telah digoreng dan gaul rata.
5.    Masukkan santan sawit dan teruskan menggaul sehingga rata.  Perisakan dengan garam dan gula.
6.    Siap untuk dihidang dan boleh dimakan dengan lontong atau nasi.
