KERABU MANGGA / MANGO SALAD

 Bahan-bahan/Ingredients
Ikan bilis ditumbuk/Pounded anchovies
Kacang tanah ditumbuk / Coarsely pounded peanuts
Sos / sauce

Mango Salad

Ingredients

Finely clipped/shredded ingredients
1 mango (can use a special peeler)
1 green apple
1 stalk lemongrass
1 ginger flower
3 shallots
1 red chilli
4 bird’s eye chillies

For the sauce
4 Calamansi /1 lemon for juice
1 teaspoon fish sauce
1 teaspoon honey
3 crushed bird’s eye chillies

Sprinkled ingredients
Coarsely pounded peanuts
Fried anchovies and pounded
Salt

Methods

1.    Mix all shredded materials.
2.    Heat a pan and add the fish sauce, lime /lemon juice, crushed bird’s eye chillies and honey to a boil.
3.    Pour sauce mixture and mix well with shredded ingredients, salt, peanuts and anchovies.
4.    Ready to be served.

Kerabu Mangga

Bahan-bahan

Bahan diracik halus
1 biji mangga muda (boleh juga diguna peeler khas)
1 biji epal hijau
1 batang serai
1 bunga kantan
3 ulas bawang merah
1 cili merah
4 cili padi

Untuk sos
4 limau kasturi/1 lemon untuk jus
1 sudu kecil sos ikan
1 sudu kecil madu
3 cili padi ditumbuk

Bahan taburan
Kacang tanah ditumbuk kasar
Ikan bilis digoreng dan ditumbuk
Garam

Langkah-langkah

1.    Semua bahan yang diracik digaul.
2.    Panaskan kuali dan masukkan sos ikan, jus limau/lemon, cili padi ditumbuk dan madu sehingga mendidih.
3.    Curahkan sos ke campuran bahan diracik dan digaul rata bersama garam, kacang tanah dan ikan bilis.
4.    Siap untuk dihidang.
