RENDANG DENDENG DAGING / BEEF RENDANG DENDENG




Beef Rendang Dendeng
 

Ingredients

1 kg meat, boiled and sliced
20 dried chilies blended
2 onion blended
2 cloves garlic blended
1 cm galangal blended
2 cm ginger blended
25 gm anchovies / dried shrimp blended
1 turmeric leaf
2 kaffir lime leaves
Palm sugar
Salt
Tamarind juice
Fried onions from ½ kg of onion
Sweet-cream soy sauce
Olive oil

Methods

  1. Boil meat until cooked and thinly sliced. Separated it and tossed. Set aside the broth.
  2. Dried meat than pounded until tender.
  3. Heat olive oil in a wok, sauté blended ingredients until fragrant.
  4. Pour soy sauce and mix it with sautéed ingredients and stir it.
  5. Put kaffir lime leaves and turmeric leaves. Add beef stock if mixture becomes too thick.
  6. Season it with palm sugar, salt and tamarind juice.
  7. Once the mixture is thick add pounded meat and mix it until well blended.
  8. Sprinkled fried onion and blended until well mix. Leave it on low heat until the sauce slightly dried.
  9. Ready to be served.
Rendang Daging Dendeng
 

Bahan-bahan

1 kg daging direbus dan dipotong nipis
20 tangkai cili kering dikisar
2 biji bawang besar dikisar
2 ulas bawang putih dikisar
1 cm lengkuas dikisar
2 cm halia dikisar
1 batang serai dikisar
25 gram ikan bilis / udang kering dikisar
1 helai daun kunyit
2 helai daun lemau purut
Gula Melaka
Garam
Air asam jawa
Bawang goreng dari ½ kg bawang merah
Kicap lemak manis
Minyak zaiton

Langkah-langkah

  1. Daging direbus sehingga masak dan dipotong nipis. Diasing dan ditoskan. Ketepikan air rebusan.
  2. Daging yang agak kering ditumbuk menggunakan lesong sehingga lembut.
  3. Panaskan minyak zaiton dalam kuali, tumiskan bahan yang dikisar sehingga naik bau.
  4. Masukkan kicap dan digaul bersama bahan tumisan.
  5. Masukkan daun limau purut dan daun kunyit. Tambahkan air rebusan daging jika campuran menjadi terlalu pekat.
  6. Perisakan dengan gula melaka, garam dan asam jawa.
  7. Setelah campuran menjadi agak pekat masukkan daging yang telah ditumbuk dan digaul sehingga sebati.
  8. Taburkan bawang goreng dan dirata di dalam kuali. Biarkan di atas api kecil sehingga campuran menjadi agak kering.
  9. Siap untuk dihidang.
