'Eid Al-Fitr 2013 Menu
Happy Eid 'Eid Al-Fitr to all Muslim friends. This year the feast menu is: -
1. Compressed rice cooked in banana leaf
2. Lodeh sauce
3. Chicken rendang (recipe below)
4. Sambal Goreng
5. Meat rendang dendeng
6. Hot peanut sauce with lamb tripe
All dishes are home cooked, except for compressed rice. Happy 'Eid Al-Fitr to all, Please forgive us spiritually and physically.
Chicken
Rendang
Ingredients
1 kilograms of
chicken – cut into small pieces
2 onions *
4 cloves
garlic *
1 inch ginger
*
½ inch
galangal *
½ inch fresh
turmeric *
3 stalks
lemongrass *
10 chili padi
(bird’s eye chili) *
2 pieces of
turmeric leaves (finely chopped ½ pieces for garnishing) *
(*) All
materials blended
4 tablespoons
chili paste
1 tablespoon
of turmeric powder
3 cups palm
oil milk
2 tablespoons
kerisek (fried coconut)
1 tablespoon
brown sugar
Olive oil
Salt
Dried tamarind
Methods
1. Heat olive oil in a pan.
2. Sauté all blended ingredients, dried
tamarind and turmeric powder until fragrant and become crisp.
3. Put chicken and mixed with blended
ingredients.
4. Season it with salt and brown sugar.
5. When the mixture has well blended put kerisek.
6. Slowly add in palm oil milk and
stir-fry until oil come out.
7. After a bit dry put finely cut turmeric
leaves and continue to stir.
8. When the chicken meat tender and the
gravy is quite dry, serve with steamed rice, compressed rice or lemang.
Menu 'Eidul Fitri 2013
Selamat menyambut Hari Raya 'Eidul Fitri kepada semua sahabat-sahabat Islam. Menu hari raya tahun ini adalah :-
1. Nasi empit daun pisang
2. Kuah lodeh
3. Rendang ayam (resepi di bawah)
Semua lauk-pauk dimasak sendiri kecuali nasi empit daun pisang. Kepada semua diucapkan selamat menyambut 'Eidul Fitri, Maaf Zahir dan Batin.

kilogram daging ayam dipotong kecil

biji bawang besar *

inci lengkuas *

inci kunyit segar *

biji cili padi *

helai daun kunyit (½ helai dipotong halus untuk taburan) *

bahan dikisar

sudu cili kisar

sudu besar serbuk kunyit

cawan santan sawit
2
sudu besar kerisek
1
sudu besar gula melaka
Minyak
zaiton
Garam
Asam
keping
Langkah-langkah
1.
Panaskan minyak zaiton dalam kuali.
2.
Tumiskan semua bahan dikisar, asam
keping dan serbuk kunyit sehingga naik bau dan menjadi garing.
3.
Masukkan daging ayam dan digaul dengan
bahan yang ditumis.
4.
Setelah sebati perisakan dengan garam
dan gula melaka.
5.
Bila campuran telah sebati masukkan
kerisek.
6.
Perlahan-lahan masukkan santan sawit
dan kacau sehingga naik minyak.
7.
Setelah agak kering masukkan daun
kunyit yang dipotong halus dan terus mengacau.
8.
Apabila daging ayam telah empuk dan
kuah menjadi agak kering, hidangkan bersama nasi, ketupat atau lemang.
