Ikan Siakap / Ruby Snapper
Steamed Fish
Ingredients
1 medium-sized fish (I
use ruby snapper and golden pomfret fish)
Wheat
flour for the fish to remove the fishy ceil
3 inch ginger - cut lengthwise
Celery leaves - cut 1 inch long
Coriander leaves
- cut 1 inch long
Spring
onion - cut 1 inch long
5 small sticks cut chilies
1 teaspoon blended garlic
1 teaspoon blended ginger
1 torch ginger
flower
1 clove onion
4 cloves garlic
3 asam boi
½ teaspoon coarse ground black
pepper
1 tablespoon oyster
sauce
1 tablespoon soy
sauce
½ teaspoon fish
sauce
½ lemon, squeeze
for juice
1 stalk lemon
grass, bruised
½ carrot sticks - cut lengthwise
Salt
Sugar
2 kaffir
lime leaves
1 tablespoon chili
powder
Olive oil
Methods
1. Cleaned and sliced fish. Marinate fish with wheat
flour to remove the fishy smell. Cut slit
the fish body. Rinse the smear of flour.
2. Sprinkle ginger, onion, celery, spring onion,
coriander, garlic and a ginger inside the fish.
3. Place fish into steamer container.
4. Sprinkle all the leaves (celery, spring
onion, and coriander), ginger flower, ginger, onion
and lemon on a fish.
5. Sprinkle salt, pepper, cut chili, all
the sauces and chili powder.
6. Squeeze lemon and add carrot, asam
boi and a little water.
7. Sprinkle a little olive oil. Place
container into the steamer. Steam it for 7 to 10 minutes.
8. Take it out, ready to be served with
rice.
Ikan Kukus
Bahan-bahan

ekor ikan saiz sederhana (saya guna ikan siakap dan bawal emas)
Tepong
gandum untuk melumur ikan bagi membuang hanyir
3
inci halia muda - dipotong memanjang
Daun
sop – dipotong 1 inci panjang

ketumbar – dipotong 1 inci panjang

bawang – dipotong 1 inci panjang

batang cili padi dipotong kecil
1
sudu teh kisaran bawang putih
1
sudu teh kisaran halia
1
kuntum bunga kantan
1
ulas bawang besar
4
ulas bawang putih
3
biji asam boi
½
sudu serbuk kasar lada hitam
1
sudu besar sos tiram
1
sudu besar kicap
½
sudu teh sos ikan
½
biji lemon
1
batang serai dititik
½
batang lobak merah – dipotong memanjang

helai daun limau purut

sudu besar serbuk cili

Langkah-langkah
1. Ikan disiang dan dibelah dua. Lumurkan tepong gandum untuk
menghilangkan bau hanyir. Kelar badan ikan. Bilas lumuran tepung.
2. Taburkan halia muda, bawang besar, daun sop, daun bawang, daun
ketumbar, kisaran bawang putih dan kisaran halia ke bahagian dalam ikan.
3. Masukkan dalam bekas untuk mengukus.
4. Taburkan daun-daun (sop, bawang, ketumbar), bunga kantan, halia
muda, bawang besar dan serai ke atas badan ikan.
5. Taburkan garam, lada hitam, cili padi dan serbuk cili.
6. Perahkan lemon dan masukkan lobak merah, asam boi dan sedikit air.
7. Siramkan sedikit minyak zaiton. Masukkan ke dalam
kukus. Kukus selama 7 hingga 10 minit.
8. Keluarkan, siap untuk dihidang bersama nasi.
