Asam Pedas Lada Hitam Tenggiri
Bahan-bahan
1 potong (250 gm) ikan tenggiri (guna ikan lain pun boleh)
5 biji cili hidup – dikisar
1 ulas bawang besar – dikisar
2 ulas bawang putih – dikisar
10 mm halia – dikisar
5 mm kunyit hidup – dikisar
5 mm lengkuas – dikisar
1 batang serai – dikisar
1 kuntum bunga kantan
¼ sudu teh lada hitam
Daun kesom
Bendi
Terong
Garam
Gula
Asam keping
Minyak zaiton
Langkah-langkah
- Panas kuali, masukkan minyak zaiton. Setelah minyak panas, tumiskan bahan kisar.
- Masukkan daun kesom.
- Setelah bahan yang dikisar masak/garing masukkan sedikit air.
- Masukkan potongan ikan tenggiri.
- Masukkan bendi, asam keping, terung, bunga kantan, garam dan gula.
- Setelah mendidih, masukkan serbuk lada hitam dan biarkan seketika.
- Siap untuk dihidang.
Ingredients
1 slice (250 g) mackerel (can use other types of fish)
5 fresh chilies - blended
1 large onion - blended
2 cloves garlic - blended
10 mm ginger - blended
5 mm turmeric - blended
5 mm galangal - blended
1 stalk lemon grass - blended
1 torch ginger bud
¼ teaspoon black pepper
Vietnamese coriander leaves
Ladies’ finger
Egg plant
Salt
Sugar
Dried sliced tamarind
Olive oil
Methods
- Heat a pan, add olive oil. Fry blended ingredients.
- Put Vietnamese coriander leaves.
- After the blended ingredients cooked add water. Let it boil.
- Put the mackerel slices.
- Add ladies’ finger, dried sliced tamarind, egg plant, torch ginger bud, salt and sugar.
- After the mixture boiled, add black pepper and let it simmer for a while.
- Ready to serve.
