BUBUR NASI IKAN MASIN-LADA HITAM / SALTED FISH-BLACK PEPPER PORRIDGE





Salted Fish-Black Pepper Porridge

Ingredients

1 cup rice
1 salted egg
1 slice of salted fish (about 3 inches)
1 tablespoon coarse ground black pepper
2 tablespoon dried shrimps
1 onion
4 long beans - cut small
100 gm anchovies
water

Sambal

2 cloves garlic, ground
1 onion, ground
10 cm ginger ground
10 dried chilies ground
Salt
Sugar
Tamarind
Olive oil

Methods

Porridge
  1. Rice washed and cooked in 1:4 ratio (rice:water)
  2. After boiling, allowed the rice to expand and became more liquid.
Sambal
  1. Heat the wok and pour olive oil.
  2. Stir-fry ground ingredients until fragrant.
  3. Add salt, sugar, tamarind and some water. Stir until well mixed.
  4. Leave the mixture to cool. Ready to serve.
Add on
  1. Boil salted egg. Cut to 4 section.
  2. Cut long bean into chunky.
  3. Fry salted fish and dried shrimp.
  4. Pound the pepper, salted fish, dried shrimp and onions (all pounded coarse) and mix well.
  5. Fried anchovies.
  6. All materials and sauce were spread on porridge in the bowl.
  7. Ready to serve.
Bubur Nasi Ikan Masin-Lada Hitam


Bahan-bahan

1 cawan beras
1 biji telur masin
1 potong ikan masin (lebih kurang 3 inci)
1 sudu besar lada hitam dikisar kasar
2 sudu besar udang kering
1 ulas bawang besar
4 jalur kacang panjang – dipotong kecil
100 gm ikan bilis
Air

Sambal

2 ulas bawang putih dikisar
1 ulas bawang besar dikisar
10 cm halia dikisar
10 tangkai cili kering dikisar
Garam
Gula
Asam keping
Minyak zaiton

Langkah-langkah

Bubur nasi
  1. Beras dibasuh dan dimasak dengan nisbah 1:4. (Beras:Air)
  2. Setelah mendidih dibiarkan beras mengembang dan tiada butir-butir nasi.
Sambal
  1. Panaskan kuali dan tuangkan minyak zaitun.
  2. Tumiskan bahan dikisar sehingga naik bau.
  3. Masukkan garam, gula dan sedikit air. Kacau sehingga sebati.
  4. Biarkan campuran menjadi garing. Siap untuk dihidang.
Hiasan
  1. Rebus telor masin. Belah 4.
  2. Potong kacang panjang kecil-kecil
  3. Ikan masin & udang kering digoreng. 
  4. Tumbuk lada hitam, ikan masin, udang kering & bawang besar (semua tumbuk kasar) dan gaul. 
  5. Goreng ikan bilis.
  6. Semua bahan ditaburkan ke atas bubur nasi yang dimasukkan dalam mangkuk.
  7. Siap untuk dihidang.
